Juicy Roasted Chicken

Reviewed: Aug. 31, 2007
This was a great recipe to follow the first time around. Next time I will use less salt and do some experimenting.

Vegetable Medley I

Reviewed: Sep. 1, 2007
I'm not sure what the point of baking after sauteing was- the consistency did not seem to change much. I will just use the first part of this recipe to get the blend of herb and vegetable flavors. I agree with the other reviewers that adding the tomatoes gave too much water. This froze well and tasted great after reheating.

Chocolate Chip Cookies VI

Reviewed: Sep. 16, 2007
This recipes was a good idea but needs some tweaking. For one, it is overly sweet. I think next time I would cut the sugar and use some brown sugar instead of white. The cookies have a nice flavor otherwise and a cakey consistency but they are very filling. I used slightly more chips than called for and that was good if not too chocolatey.

Apple Pumpkin Muffins

Reviewed: Oct. 15, 2007
Very yummy muffins but the pumpkin taste does not come through much. I made mine with half white sugar/brown sugar and it was good.

Basil Brussels Sprouts

Reviewed: Oct. 20, 2007
I used way too much pepper because I had less than 2 lbs brussels sprouts, but the end result was nice and hearty.

Patty's Mashed Turnips

Reviewed: Oct. 20, 2007
A good, basic recipe. I left out the milk and it was still a bit watery. Easy, one pot dish.

Zucchini Patties

Reviewed: Oct. 29, 2007
This recipe, as is, is very bland! But the flour and cheese help bind the zucchini- I will combine this with the 'crab cakes' recipe and see how it works.

Zucchini Egg Bake

The monterey jack adds a nice flavor to this dish which could be dressed up a number of ways. Next time I will put in some hot peppers.

Granola Bars II

Reviewed: Nov. 4, 2007
Way too sweet, moist, and chewy to be called a granola bar. Try another recipe. Also, beware that this makes a large amount!

Not terrible, but could use some additional seasonings beyond just soy sauce.

Light Oat Bread

Reviewed: Nov. 6, 2007
This is a fantastic every day bread recipe that can be modified as needed. It comes out moist and pretty fluffy, though still hearty like homemade bread should be! I added honey and used whole wheat bread flour (with 1 T gluten added per cup flour) and it came out very nice. I will try upping the oats next time to give it a little more crunch as they really do disappear into the bread.

Pumpkin, Sweet Potato, and Leek Soup

Reviewed: Nov. 10, 2007
Agreed- this recipe is A LOT of work and doesn't need any cream to make it hearty. It's hard to gauge the amount of vegetables the recipes calls for from the description, but the mix seems forgiving. End result is delicious and nutritious, and filling enough to be a main course (perhaps with some crusty bread).

Whole Grain Waffles

Reviewed: Nov. 26, 2007
These waffles were GREAT! Light and fluffy inside with just enough crispiness on the outside. My batter made 9 small waffles. This would be a great, quick way to get kids to eat whole wheat. I had no wheat germ so I used wheat bran instead.

Whole Wheat Beer Bread

Reviewed: Dec. 2, 2007
This baked up well enough, and was very quick and easy, but I just don't like my bread tasting like beer.

Sweet Dinner Rolls

Reviewed: Dec. 3, 2007
Delicious! If you using a bread machine, keep an eye on the rise, as mine rose so much that it stuck to the lid. I also baked at 350 (took 16 minutes) and left out the second application of butter.

Belgian Molasses Bread

Reviewed: Feb. 10, 2008
Very nice dark loaf. I used white bread flour and whole wheat bread flour and increased the yeast to 2 tsp to prevent under-rising. The molasses taste does come through a bit, particularly in the smell. This bread is very moist and fluffy.

Potato Leek Soup III

Reviewed: Mar. 15, 2008
This was so good! And reminded me of soup I've had in Ireland and not found at restaurants here in the states. However, I made some modifications to the recipe both on purpose and by accident. 1) Used more leeks, added some cloves of garlic 2) only had 1/3 of the broth it called for, so I used water in place 3) forgot to add the cream until very near the end, just heated it up again and served. Also, I had some other root vegetables hanging around, so my version had 2 parsnips and a sweet potato in it. The leeks and butter really contribute most of the flavor, though, regardless of other ingredients. I've read online that potato leek soup can be frozen, so I will try freezing some of the leftovers for a tasty dinner later on.

Sweet and Tangy Sauteed Collard Greens

Reviewed: Mar. 27, 2008
The vinegar/honey flavoring is way too strong, and this recipe calls for a lot of butter. The overall taste is just weird. I definitely will not make this again.
