English Muffin Bread

Easy, and the recipe seems pretty forgiving. I used a mix of all purpose flour, bread flour, and whole wheat flour and it came out great.

Butterscotch Apple Dumplings

You don't need the butterscotch topping for this to be good. The crust came out excellent, and I used whole wheat pastry flour.

Fluffy Pancakes

Five stars AND not a weekend has gone by in the last month when I haven't made these. They come out a little different each time, but are always tasty. If you substitute oil for the butter, they make crunchy waffles.

Ciabatta Bread

Like others I had problems with the dough being too wet. To be fair though, I made some substitutions to the flours called for.

No Tomato Pasta Sauce

Reviewed: May 2, 2010
Making this from scratch (boiling the carrots and beets) was a lot of work and it just tasted weird! I could definitely taste the red wine vinegar, and it didn't taste at all like tomatoes. The only saving grace were the onions and italian seasoning. Still, it is edible.

Magic's Green and White Chicken Soup

Reviewed: Apr. 19, 2010
Make sure to save the broth & garlic the chicken simmered in. I had to add 1/2 a box of chicken broth on top of the broth that I saved. This was AMAZING. (I left out the curry-- didn't have any).

Radish Top Soup

Better than spinach soup I've attempted before. I left out the heavy cream and just went a little heavier on the butter.

Pumpkin Casserole

This is quite yummy... but even with 1/2 the sugar I felt like I was eating a dessert.

French Brioche

Reviewed: Jan. 9, 2010
This came out AMAZING and was so easy because I cooked it from start to finish in the bread machine with additional yeast. I was afraid the recipe might be too big so I cut it to 10 servings using 1 1/2 tsp yeast. The flavor and texture is wonderful and will make awesome french toast in the morning. :)

Tortillas I

works pretty well. this doesn't make as many servings as it says. Make the tortillas a little bigger than "golf ball size."

Authentic Mexican Tortillas

Reviewed: Aug. 23, 2009
Good. A bit pasty, I'll experiment with some other options, but this is a good start. My tortillas got better as I went along because I learned 1) don't roll out super thin 2) dont' try to cook them so they are brown and toasted looking- just until they get started looking a bit golden (cooking too long dries them out) 3) instead of covering them with a dishtowel, allow each tortilla to briefly cool on a plate before placing in a ziploc bag containing a moist paper towel (you will melt the plastic if you put them directly in off the griddle). I used lard.

Very basic Chinese take-out taste, too heavy on the soy sauce for my liking.

Green Velvet Soup

This is a fantastic soup, very flavorful and healthy! And I like the fact that it uses a lot of different vegetables. I used chicken stock and substituted swiss chard for the spinach. Yum! Some people may be put off by the healthy green color :)

Cocoa Chocolate Chip Cookies

Reviewed: Feb. 15, 2009
Way too salty and oily! I think problem #1 is that the pudding mix has its own salt in it. The pudding mix also gave a grittiness to the cookies (as well as a moist consistency, the only aspect I liked). I will stick to more traditional chocolate chip cookie recipes from now on.

Pretty easy, satisfying, and functional. You only need a little bit of sausage for flavor as the beans provide enough protein and bulk on their own.

Autumn Vegetables Au Gratin

This was good but took a lot of time to prepare and I didn't feel that the baking stage added much to the dish. I may have overstuffed the pan so that the baking time wasn't long enough.

A Baker's Secret for Bread Machines

Reviewed: Jul. 19, 2008
I used butter instead of lard and think I halved the salt and tossed in some brown sugar. The loaf was pretty tasteless and fell a bit on top (too much moisture) but it had the best texture of any loaf I've made, so I'll have to study the recipe and see if I can make this basic recipe taste better.

Colorful Vegetable Bake

I just pulled some of this out of the freezer and had a little taste of fresh veggies from last summer. I had added a little hot pepper to it for some more kick. Very good and filling.
