Perfect Berry Shortcakes

I don't care what other people said negatively about this recipe but I made it like it said and added the extra half and half (I used whole milk) and it is amazing. The key is not to handle the dough too much, just enough to squish the dough together until it sticks to itself. Gently push it into shape and cut it and separate the 6 pieces. Do this as quickly as possible so the butter doesn't melt. Brush the egg whites on and the sugar and you have perfection in a short cake. Moist on the inside and crunchy on the outside.

Champagne Cake I

This was my first cake i made from scratch and it turned out perfect. Very moist and light. I used Softasilk cake flour instead of all purpose flour. I would highly recommend this recipe to anyone wanting to make a cake from scratch. It is not too sweet so it can be frosted and not be overwhelmingly sweet. I filled mine with a homemade tart raspberry filling.

Penne with Chicken and Pesto

This recipe is easy of course as everyone says and a good base, you can add anything you like, I added halved cherry tomatoes and it was very nice. I would recommend not eating it as the solitary dish but add a side dish of foccacia, a salad and some red wine of course.

Black Olive and Rosemary Focaccia

The perfect blend of spices and flavor. By using fresh grated Parmesan cheese, there was a nice moist layer of cheese that is very delicious. A good side to any Italian meal.
