Quinoa and Black Beans

This is a good basic, simple quinoa recipe. An ideal start for first time users of quinoa. I'll add chilis and a few other aromatics next time.

Moroccan Lentil Soup

This was easy and tastes great! I used a can of Rotel plus the cayanne and the heat was perfect! It makes a very large pot of soup though so you may want to cut it in half if you are just feeding yourself.

Lemon Curd Bars

This was one that EVERYONE enjoyed! This is a bar that you have to eat with a plate and fork not a hand held food. I made no alterations to the recipe.

Hot Bean Dip

Buckeye Balls II

So sweet they hurt my teeth! I'm going to use part Splenda next time. I found that the "chocolate" bark doesn't work as well as melted choco chips with a tbs of crisco.

Butternut Squash Casserole

Great Taste! I skipped the topping and next time I'll whip the squash before baking to give it a creamier texture. I don't have a microwave right now so I baked the squash the way others had.

Burrito Pie

Awesome! I made a vegetarian version without the ground beef. I put whole beans in the beefs place. I followed the recipe exactly after that and next time I'll turn the heat up by using "hot" Rotel instead of the "original". THIS IS A HUGE RECIPE!

Connie's Zucchini "Crab" Cakes

As a vegetarian I don't know what a true crab cake tastes like but these were and interesting change from the typical veggie fritter. I took the advise of another and squeezed the water out of the zucchini after shredding it. I also used Italian style bread crumbs and I baked them. Whatever you do DON'T add any salt, the Old Bay has plenty! The resipe was a 5 star for simplicity but the taste gets only 3 stars.

Creamy Orange Cake

Good, cool cake. If I were to make it again I'd put a can of mandarin oranges in the mix before baking it to give it a more 'orangey' flavor. I also like the fact that it's refrigerated and it is still good with ice cream.

African Peanut Soup

This is GREAT soup. I use one can of HOT Rotel and one can of tomatoes with garlic and onion. Also, white rice works just as well as brown.

Italian Wedding Cookies III

Wonderful cookie and great for the holiday potlucks at work! I did what most did...reduce the salt to 1/4 tsp. I decided not to take the advise of some and dusted the cookies with powdered sugar just before serving, otherwise they got gooey on the outside. I also used pecans in lieu of almonds.
