Brown Sugar Shortbread Cookies

These are delish! They are hard and flat since they do not have egg or leavening. Expect that! Try not to over mix after adding the flour. You will produce too much gluten and they will lose flavor and texture. Hand mixing is best once the flour is added. Also, make sure you don't roll them too thin or they will get harder! Enjoy

Hot Fudge Pudding Cake III

Funny thing is I made another recipe on this site but I made several modifications and it was pretty much this recipe! I've been looking for this for several years as I lost my original recipe. I did use 1/2 Cup of white sugar since I didn't want it to be too sweet and I used 4 T of butter. For ease of making I melted the butter in the 8x8 pan in the oven and I stirred the dry ingredients to the cake mix in a bowl and then poured it on top of the butter added the milk and 1 teaspoon of vanilla and mixed. I added chopped pecans on top of the batter, about 1/2 cup. Then used the same bowl to mix the brown sugar and cocoa powder. Sprinkled on top of pecans and poured the boiling water over the top. I added 1 Tablespoon of instant coffee to my water and didn't care for the coffee I used. I will try again with instant espresso. Turned out great! Just like I remember with lots of chocolate sauce to ladle over the ice cream!

Chef John's Scones

These turned out beautiful. Very crunchy on the outside but soft and fluffy on the inside. These are not dense heavy scones they a lighter version. I made them with cinnamon chips and they were delightful!

Chocolate Frosted Marble Cheesecake

This was excellent. I also didn't bother with the bath just wrapped with foil and it was plenty moist. I skipped the topping because my husband doesn't like things too sweet and I was baking it for our Anniversary so I really wanted him to like it. I will try it next time with the frosting for me and the kids!

Puppy Chow II

Most importantly, if you don't want to use a ton of powdered sugar - don't use a paper bag. I started with the paper bag but it was way too sugar coated for us. With the second half of the batch I sprinkled powdered sugar on a deep cookie sheet and then layered the coated cereal and sprinkled powdered sugar over the top then mixed by hand breaking up the chunks to coat with a little powdered sugar. I also suggest that this be melted over low heat on the stove top. I melted in the micro stirring at 30 second intervals for a total of 1 min 30 sec and it was getting stiffer after the first minute. I followed other suggestions and used crispix and thought it was great. I didn't have enough peanut butter so I threw in some nutella and I think this worked well although it did add more sugar. Overall pretty good treat in moderation.

Cajun Beef Pepper Steak

I thought the steak turned out really well. It was fast and easy and tasty! I despise bell peppers so I substituted onion. Also, I didn't have the Cajun rice so I made a home made Mexican white rice. Salad, corn on the cob and baked beans made the perfect meal.

Minister's Delight

I did change this a lot so I'm not rating this version but the option I tried. I wanted to see if I could make it like a pineapple upside down cake. I added 1/2 C of brown sugar and mixed 1/4 C of butter into it and then layered pineapple rings on top. I poured the dry cake mix over the top, then the remaining butter, the reserved pineapple juice, nuts and some coconut. It took 3 hours to cook and it was delicious!
