Banana Crumb Muffins

These muffins are literally to die for. I added blueberries but other than that didn't change a thing. Unbelievably good!

These are delicious and really easy. I sometimes leave out the lemon zest if I don't have a lemon, and they are still great. Also using raw sugar in the topping really adds a good crunch

Slow-Cooker Chicken Tortilla Soup

This was just ok. A little bland and the enchilada sauce gives it a slightly odd aftertaste. I didn't cook the chicken before as other reviews suggested and it did turn out nice and tender. Next time I would leave out the enchilada sauce and maybe add more seasoning.

Berry Bliss Cake

Very good! I left out the OJ, and I used 2 cups of instant premade vanilla pudding cups. Took literally 5 minutes to make and was a hit. Was nice and light, great for summer.

White Bean Chicken Chili

Absolutely delicious and ridiculously easy! I didn't have any canned tomatoes or green chiles, so instead I used about a 1/4 cup tomato paste and 1/2 cup verde sauce. I also subbed canned corn for fresh, as fresh is off season. I recommend using a *tad* more of the spices and also simmering for an additional 20 minutes to really let the broth boil down. Will be making this again!

Goat Cheese and Spinach Turkey Burgers

These were awesome! As suggested, I used more goat cheese. They were very juicy and flavorful. I served them with mayo, tomatoes, and diced red onion in toasted pitas.

Pumpkin Cheesecake Bars

These were really good! I made them for an office potluck and they were all eaten up. I'm giving them 4 stars instead of 5 because they were just a tad too sweet for me. Maybe use less condensed milk? Also, I couldn't find pumpkin pie spice, so I used a blend of nutmeg, cinnamon, and cloves.
