Hawaiian Belly Buster Burgers

Reviewed: Jun. 29, 2012
I gave this recipe three stars just because the basic idea is great but mixing the bbq sauce in and not adding a little panko crumbs guarantees that the burgers will fall apart. This is the way we do it; put the meat in a bowl and add about 1/4 cup of chopped onion, about 1/2 cup bbq sauce, and some panko crumbs and lightly mix until the meat and additions are fully mixed together. Do not handle the meat roughly; use just your fingers and don't squeeze the ingredients too much, that makes a compact, tough burger. Use sliced fresh pineapple, peel, slice, grill, and then remove the core with a small paring knife, also use Kings Hawaiian sandwich rolls if you can find them. We also make a wasabi/honey mayo to go on the burgers. The honey helps with the bitterness of the wasabi powder that we mix into the mayo.

Quick and Easy Grilled Potatoes

Reviewed: Jun. 21, 2012
Have been doing potatoes like this for a few years. Everyone that has had them, loves 'em. I do mine just a little different. Quarter baking potatoes, cover with plastic wrap and vent. Microwave until just cooked thru then roll in a mix of rosemary, powdered garlic, onion powder, thyme, dill, cayenne, and tarragon mixed with either olive oil or butter depending on what we're having for meat.

Pineapple Bacon Burgers

Reviewed: May 29, 2012
If you fold a little panko crumbs into the meat with the bbq sauce the burgers won't fall apart. We mix in a little chopped onion too.

Grilled Pineapple with Mascarpone Cream

Reviewed: May 26, 2012
Had this at a friends house but she opted to top the pineapple with Nutella and plain mascapone cheese. It is absolutely the best dessert ever!!!! Have made it at home many times since.

Strawberry Napoleons

Reviewed: May 21, 2012
Have made this for a couple of years, don't remember if I thought it up myself or saw the recipe somewhere but I do it a bit differently. I use instant cheesecake sugar-free pudding mix layered with the fresh strawberries and Cool Whip. It looks and tastes like I slaved all day.

Kim's Spinach Strawberry Salad

Reviewed: May 16, 2012
We love this salad. I've made it with the cashews once and almonds once but usually make it with macadamia nuts now. I've used the dark balsamic vinegar but lately I've used white balsamic. It makes for a nicer color.

Bacon for the Family or a Crowd

Reviewed: Apr. 3, 2012
Do not let bacon sit on baking sheet once it is done. It reabsorbs some of the grease and gets very unappetizing.

Chocolate Meringue Cookies

Reviewed: Mar. 7, 2012
I too made these with Splenda. I used almost 2/3 of a cup and placed one chocolate chip on top of each cookie. I was afraid that mixing the chips in would deflate these delicious morsels. They baked to perfect crispness in 30 minutes and by using the parchment paper they didn't stick. In fact they almost slid off the paper when I took the pan out of the oven.

Delicious!! My daughter made these as Christmas presents and they were very easy for her to make. She added peanut butter and chocolate chips along with the chunks.

All-Day Apple Butter

Delicious! I did add cider and started it on the stove top at first then trasnsferred to the slow cooker. I wanted it smooth so I went at it with my stick processor. Ended up making another dozen jars to give away as Christmas presents.

Crispy Cheese Twists

Reviewed: Oct. 19, 2010
Don't bother with the egg wash, just very lightly spread some real butter on the dough, sprinkle with your seasonings and roll in lightly with a rolling pin then cut, twist, and bake. Also the egg wash could 'glue' the layers of pastry together and prevent the puff.
