Chef John's Cheesy Crackers

Made these today and they are delicious but I learned a few things along the way. 1. Make sure your cheese is a warm as the butter, cold cheese is harder to work with than cold butter. 2. Do not re-roll the scraps, makes them tough and chewy, if you're making these for guests just nibble on the uneven ones. 3. Don't bother wasting your time docking them with a skewer five times just poke them twice with the times of a fork, 4. Use your hands to mix the dough, at least for the last few minutes. 5. They're easier to dock if they stay sitting next to each other before putting them on the baking sheet. 6. Do use foil but just spray it with non-stick spray instead of wiping oil all over it.

Classic Tiramisu

Wonderful taste and texture but it made 2 big bowls for me with the amounts listed. Next time I'll cut everything in half. By the way this is a VERY DANGEROUS RECIPE!!!!! Its just too delicious!!!!

Chocolate Chip Pumpkin Cookies

Cakey little poufs of deliciousness!!! Recipe states it only makes 7 dozen but I got just 1 short of 11 dozen. I did add more than 2 teaspoons of ground cinnamon and more than 1 teaspoon of pumpkin pie spice, after adding respective teaspoons of spices I decided it needed more and just shook a good amount from the bottles. I also added some fresh grated nutmeg. Used mini chips and toasted pecans instead of the regular size chips. (I always toast nuts before using.)These will be making repeat appearances throughout the year!!!!

Grilled Garlic Parmesan Zucchini

Good recipe to use up zucchini. I added one fresh basil leaf and 2 mint leaves just because I grew some this year and wanted to use it. I did use part butter and part olive oil just because all butter might have burned on my grill.

Homemade Plain Yogurt

I made mine by setting the filled and lidded quart jars on top of my upright freezer wrapped in a heavy bath towel. The temp there is just 103. By morning I had the most delicious yogurt waiting for breakfast .

Refreshing Cucumber Watermelon Salad

Really liked this recipe but as I don't care for watermelon I subbed fresh papaya for it, other than that made recipe exactly as written. It was delicious, I served with a very thick slice of deli ham that had been 'sizzled' on the grill. Will be making this again and again.

Dad's Favorite Peanut Butter Cookies

This is the same recipe I've used for years, original came out of a Betty Crocker cookbook my hubby gave me for our first anniversary 35 years ago this Sunday. Its the only PB cookie recipe I've used!!!

Rainbow Citrus Cake

I can't wait for summer and our annual big shin-dig! This cake will be perfect for it. The theme is always tropical as we live in Maine and the tropics are THE place everyone here wants to visit, just to get away form the cold and snow!!!

Sugar Coated Pecans

These so good. You can vary the flavor by substituting cayenne, masala seasoning, pumpkin pie spice mix, or just about anything else you want. We're going to try mixing baking cocoa with the sugar, we'll update how it works.

Crescent Mummy Dogs

There is no way that one can of rolls will cover 10 dogs. I used 2 cans and couldn't do all 16 dogs that I need for tonight. I cut the dough into very thin strips, some less that 1/4 inch and they still didn't cover like the picture shows.

Chicken Breast Cutlets with Artichokes and Capers

It was delicious. I did make a few small changes tho. I reduced the chicken broth to 1 cup and substituted a cup moscato wine for the 2nd cup, and used half olive oil and half butter to saute the chicken.

Amazingly Easy Irish Soda Bread

Excellent bread went great with corned beef dinner we had last night. Only change was that I used real butter in the bread and for the buttermilk wash for the outside. Was good toasted with egg and sausage for breakfast this morning too. I will use this recipe from now on for strawberry shortcakes!

Cream Cheese Penguins

Had my daughter make this for family Christmas party. It was a huge hit even the members that hate black olives at least said they were adorable! Used chive and onion cream cheese to fill them. But nobody ate them. Ended up throwing an entire platter of them away. Cute but a waste of money for my family.

Milk Cracker Stuffing

For those of you looking to make this recipe and can't find the milk crackers, I found a cracker that tastes just like the Royal Lunch ones at our local Ocean State Job Lots store. It's Burton's Rich Tea Biscuits. They are in a bright blue wrapper and I think they are made in the U. K.

Apple Spice Cake

I added one more apple because I thought mine were on the small side but I almost wish I hadn't. Made it take longer to bake and it was almost too miost. Next time I make it I'll up the spice amounts at least by one-half. It had good flavor just not spiced enough.

Hawaiian Pork Hash

Great recipe, served them to a crowd at our annual Hawaiian style bbq. The only problem was my ineptitude in pleating the wonton skins. I also couldn't find the round skins so I used the square ones. I ended up folding opposite corners together and steaming them. I did put them on lettuce leaves in the steamers so they couldn't stick. I even did 2 layers in the steamer by putting a piece of parchment paper between the layers and it worked beautifully.

Melt In Your Mouth Blueberry Cake

Great cake when made correctly. Anyone that had trouble mixing this or thought it was too thick, try mixing the merengue in, in 2 installments and make sure you use wild blueberries. Cultivated berries are tasteless.

Traditional Salisbury Steak

My first try at making salisbury steaks and they were delicious. Next time I'm going to cut the garlic back a little and put in some onion powder too. I did saute the onions beforehand and put them in the gravy.
