Rainbow Citrus Cake

While I haven't actually made this cake...yet!!!! I can't wait for summer and our annual big shin-dig to make it. This will be perfect for it. The theme is always tropical as we live in Maine and the tropics are THE place everyone here wants to visit, just to get away form the cold and snow!!!!!! I'm sure it won't be a struggle to make it, the recipe is very similar to a cake I've made for years from a Betty Crocker cookbook my DH gave me for our 1st anniversary years ago. We were as poor as church mice, I gave him a coffee thermos!!!! To you cooks that complain about too much shortening in the recipe just think of it this way, there is only a 1/4 cup per layer of cake which isn't really very much!

Sugar Coated Pecans

These so good. You can vary the flavor by substituting cayenne, masala seasoning, pumpkin pie spice mix, or just about anything else you want. We're going to try mixing baking cocoa with the sugar, we'll update how it works.

Crescent Mummy Dogs

There is no way that one can of rolls will cover 10 dogs. I used 2 cans and couldn't do all 16 dogs that I need for tonight. I cut the dough into very thin strips, some less that 1/4 inch and they still didn't cover like the picture shows.

Chicken Breast Cutlets with Artichokes and Capers

It was delicious. I did make a few small changes tho. I reduced the chicken broth to 1 cup and substituted a cup moscato wine for the 2nd cup, and used half olive oil and half butter to saute the chicken.

Amazingly Easy Irish Soda Bread

Excellent bread went great with corned beef dinner we had last night. Only change was that I used real butter in the bread and for the buttermilk wash for the outside. Was good toasted with egg and sausage for breakfast this morning too. I will use this recipe from now on for strawberry shortcakes!

Cream Cheese Penguins

Had my daughter make this for family Christmas party. It was a huge hit even the members that hate black olives at least said they were adorable! Used chive and onion cream cheese to fill them.

Milk Cracker Stuffing

For those of you looking to make this recipe and can't find the milk crackers, I found a cracker that tastes just like the Royal Lunch ones at our local Ocean State Job Lots store. It's Burton's Rich Tea Biscuits. They are in a bright blue wrapper and I think they are made in the U. K.

Apple Spice Cake

I added one more apple because I thought mine were on the small side but I almost wish I hadn't. Made it take longer to bake and it was almost too miost. Next time I make it I'll up the spice amounts at least by one-half. It had good flavor just not spiced enough.

Hawaiian Pork Hash

Great recipe, served them to a crowd at our annual Hawaiian style bbq. The only problem was my ineptitude in pleating the wonton skins. I also couldn't find the round skins so I used the square ones. I ended up folding opposite corners together and steaming them. I did put them on lettuce leaves in the steamers so they couldn't stick. I even did 2 layers in the steamer by putting a piece of parchment paper between the layers and it worked beautifully.

Traditional Salisbury Steak

My first try at making salisbury steaks and they were delicious. Next time I'm going to cut the garlic back a little and put in some onion powder too. I did saute the onions beforehand and put them in the gravy.

Hawaiian Belly Buster Burgers

I gave this recipe three stars just because the basic idea is great but mixing the bbq sauce in and not adding a little panko crumbs guarantees that the burgers will fall apart. This is the way we do it; put the meat in a bowl and add about 1/4 cup of chopped onion, about 1/2 cup bbq sauce, and some panko crumbs and lightly mix until the meat and additions are fully mixed together. Do not handle the meat roughly; use just your fingers and don't squeeze the ingredients too much, that makes a compact, tough burger. Use sliced fresh pineapple, peel, slice, grill, and then remove the core with a small paring knife, also use Kings Hawaiian sandwich rolls if you can find them. We also make a wasabi/honey mayo to go on the burgers. The honey helps with the bitterness of the wasabi powder that we mix into the mayo.

Quick and Easy Grilled Potatoes

Have been doing potatoes like this for a few years. Everyone that has had them, loves 'em. I do mine just a little different. Quarter baking potatoes, cover with plastic wrap and vent. Microwave until just cooked thru then roll in a mix of rosemary, powdered garlic, onion powder, thyme, dill,cayenne, and tarragon mixed with either olive oil or butter depending on what we're having for meat.

Pineapple Bacon Burgers

If you fold a little panko crumbs into the meat with the bbq sauce the burgers won't fall apart. We mix in a little chopped onion too.

Grilled Pineapple with Mascarpone Cream

Had this at a friends house but she opted to top the pineapple with Nutella and plain mascapone cheese. It is absolutely the best dessert ever!!!! Have made it at home many times since.

Strawberry Napoleons

Have made this for a couple of years, don't remember if I thought it up myself or saw the recipe somewhere but I do it a bit differently. I use instant cheesecake sugar-free pudding mix layered with the fresh strawberries and Cool Whip. It looks and tastes like I slaved all day.

Kim's Spinach Strawberry Salad

We love this salad. I've made it with the cashews once and almonds once but usually make it with macadamia nuts now. I've used the dark balsamic vinegar but lately I've used white balsamic. It makes for a nicer color.

Bacon for the Family or a Crowd

Do not let bacon sit on baking sheet once it is done. It reabsorbs some of the grease and gets very unappetizing.
