Amazing Pork Tenderloin in the Slow Cooker

I made this on the weekend. I followed exactly. This was fabulous, everyone loved it. I took some of the liquid to make a gravy with. Make sure you use good wine, wine that you would drink. Makes a huge difference. I cooked this on high for 3 hours.

Roasted Cauliflower Soup

Excellent soup! Even my picky girl like it....trust me no easy feat. Next time I will double recipe. Made enough for 5 of us for lunch, 1 bowl each. I used whole head of cauliflower, minus the core, my labs get that:) Used 1 whole carton of fat free chicken broth, 1 1/2 cups of milk. I added 4 chopped garlic cloves to cauliflower. Roasted in 9 x 13 glass bake dish, sprayed no stick spray Tossed cauliflower with spices and oili ncluding 1/4 tea cayenne pepper. Need to stir every 10 min. as veggies bake in cover. Sauted onion in olive oil till golden brown in my soup pot. Added butter at end. Then continued with rest of recipe. The only complaint was there wasen't enough. Served with grated 4 year old cheddar on top. I would like to try this recipe by adding chopped red, yellow or orange pepper to the cauliflower. The roasted flavour would be yummy.

Spinach and Mushroom Quesadillas

This is a fabulous recipe. I had these at a tex Mex. restaurant and had to have the recipe. Found it on, where else, here. I followed the recipe, closely, except, you do not need oil in the pan to finish. Just use a non-stick pan. I used 5 year old cheddar and spicy shredded cheese(the one in the bag). It was excellent. Made this again and used blue cheese, but the flavour wasn't right. I like that this is folded in half in the pan, much easier to work with, to serve I cut each half into 4's. I served with salsa and low fat sour creme.

Death by Chocolate

This was excellent! Everyone wanted the recipe. I followed advice and used deep dish brownie recipe instead of the cake. I tripled this recipe and make two at once. One for Christmas day and one for Christmas Eve. I used cool whip lite for layering in both, but topped one with real whip cream. The other was for the next day, so I left off cream on top and whipped it before serving. I served up dessert and spooned whipped cream on top of each serving. This is a quick and delicious dessert. I used 1% milk and lite cool whip to keep the fat down. I didn't bother with the coffee, but would like to try it with Bailey's sometime.

Wasabi Yellowfin Tuna

Excellent! This is a high-end gourmet quality feast. But, the directions need tweaking. I made this last nite for 2 girlfriends. I made the sause: used 6 tble. lite mayo, 2 teas. of wasabi, 1 tble. soya, I didn't use any other spice, mixed all well, reserve in small bowl. I marinated the filets in 1 tble. soya and 1 tble. rice vinegar, both sides, brushed mayo mixture on top, flipped over and brushed mayo on other side, covered and refrigerated for 30 min. No longer. Toasted seasame seeds, 8 tble. set aside on a small plate. To cook fish, I heated no-stick pan sprayed with baking spray on medium meat. Place fish filet, one at a time on seasames to coat, brushed with the mayo on other side and coated that side. Then into the pan. We like tuna med. rare so I cooked for 2 min. per side, for fish that was 1 1/2 inches thick. When fish is done put on serving plate. In same pan, I added leftover mayo mixture, there is lots, as I just brushed on to marinate (both sides) before marinating. I quickly heated reserved up and spread 1 tble. of this to top side of cooked tuna, and served immediately. The sesame seeds browned beautifly and stayed on fish. I would also like to try this using a good quality balsamic vinegar instead of the rice vinegar.

Marinade for Leg of Lamb or Lamb Chops

I made this on the weekend, I strained pan juices separating oil from juice. I thickened 1/4 c. of oil with enough flour to make a smooth paste, added 1/4 tea. of salt. Gradually added 1 cup of pan juices to paste, stirring constantly. Stirring on med. heat till it thickened. Made a very tasty gravey.

Mini Meatloaves

I followed recipe exactly, I thought it was pretty good, as good as meatloaf can get, my kids didn't like it at all, they ate half and scraped sauce off. I think I will just give up on making meatloaf :)

Easy Spicy Thai Slow Cooker Chicken

This had a really nice flavour, I followed recipe exactly, I was a little apprehensive of the heat of the thai chilli paste, I licked a little off the spoon, before I threw it in the sink, it was really Hot! But I went ahead and made. I had to use Kikkoman Brand Toasted Sesame Marinade, 345 ml size, as the kraft one mentioned is not available in Ontario, but I think this was comparable. I made the ginger/garlic paste as supplied, I couldn't find it in the store, I used boneless breast and bone-in skinless thighs (for more flavour). I left this on low while I went to work (I made the sauce the nite before and food processed it and stuck it in the frig), great smell when I got home. I took chicken out of pot and took out bones and roughly sliced and set aside. Turned up crock pot to high with lid on (10 to 15 min.), then I mixed about 2 tablespoons of cornstarch and water, and stirred this into sauce in the pot, it thickened up nicely. I used some Thai stick pasta (very thin pasta, that you just soak for 10 minutes in boiling water, drain and its ready) I mixed everything, including some green beans cooked to still crisp and mushrooms ) (Get those veggies into meals) This was excellent heated back up the next day, and the next day....

Slow Cooker Mongolian Beef

This is a great, delicious recipe, I omitted sugar, added mushrooms to sause and meat, and broccoli at the end, served this over rice, everyone loved it, even my picky kids

Penne in Vodka Cream

This was great, I did follow other suggestions, by cutting vodka to 1/2 c. and I used lite cream, I also add some fresh garlic to butter. This was so good, and reheats very well.

Light Wheat Rolls

I love this recipe, I have made it several times, and it always turns out great. I have also rolled out dough and brushed with melted butter and sprinkled with fresh garlic, rolled up and make garlic rolls. Yummy

Pico de Gallo Chicken Quesadillas

This was truly delicious. I used leftover chicken breast, that I put in at the end, just to quickly heat up. I replaced green pepper with orange pepper. I used the cheese I had on hand which was old cheddar. The trick with the plate works great. I heated the leftovers up the next day in frying pan, equally delicious!

Asparagus and Smoked Salmon Salad

This was good, the dressing needs more spice, I added 1/4 tea. dried dill after tasting original. I followed others suggestions and add mandarin oranges. Next time I will cube up goat cheese and add. I didn't have pecans so I used blanched almonds which I toasted. The asparagus does not need 5 min. it only takes about 3 min. so it is still crunchy.

Gourmet Mushroom Risotto

This turned out pretty good, I followed exactly,except I forgot to add butter at end,but it tasted great, I also used no fat chicken broth,and I pan fried asperagus with mushrooms, which I reduced the amount of, I used button and portobella. I will make this again, alot of work but worth it.

Lobster Soup

Wonderfull!! I made this with a couple of changes, I used lite margerine and I used 1% milk only, didn't add creme at end, also could not find celery flakes so I used 1 tea of finely chopped celery, I also used red onion as that was what I had, and simmered soup for about 1/2 hr, then cooled and reheated it later for dinner. This was yummy and I think fairly light, I had a couple friends for dinner and they loved it. I will make this again, thanks

Lighter Banana Muffins

These muffins turned out great, I took other's suggestions and changed sugar to splenda, used 4 bananas,2 eggs, 1 egg white, wholewheat flour,(I also added some bran), 1 tea. cinnamon, 1 tea. vanilla, and added chocolate chips to half the recipe, and baked for about 18 min.
