Italian Style Meatloaf I

This turned out very tasty. It was really moist, even with me using a very low fat organic ground beef. I added some shredded parmesan and cut two slices of mozzarella into small cubes. This made for a few gooey cheese morsels in the loaf! Yummy. I would recommend draining the loaf at least once during cooking to get rid of some of the extra oils/fat. I topped mine with a layer of tomato sauce and some more shredded parm. Served it up with organic mashed potatoes and organic corn. Great winter meal!

Honey Ginger Shrimp

These were quick, easy, and tasted great. I did add 1/4 cup light coconut milk and a chopped green pepper. Served over jasmine rice. Perfect! Thanks.

Brown Sugar Meatloaf

Eh... not that great. Nothing special and a little too sweet even after cutting back on the brown sugar. I'll stick with my recipe. Check out my recipe box for a really great stuffed meatloaf with mushrooms, onions and cheddar cheese. Yummy

Lamb Shank Braised in White Wine with Rosemary

Tried this for the first time and was very impressed. The meat was tender and juicy. I will say that the shank part of the lamb is a bit more fatty and dark...so beware if you do not like this type of meat. Fantastic flavors and was super easy. I used chardonnay with a splash of chicken stock. Added a bit of corn strach mixed with the pan juices to thicken at the end. Served with oven roasted potatoes and peas. Will make this again and would serve to company ( if I know they like lamb).

Cake Balls

I rated this 3 stars due to the fact I could not stand these things but most of the kids and a few adults did enjoy them. Perhaps it is the fact hubby and I are on a organic diet with no genetically modified corn ( corn syrups, corn starch etc) . The sweetness of this was overwhelming. It had the consistency of something having been previously chewed then dipped in chocolate. But like I said the kids liked them.

Black Magic Cake

I am giving it 3 stars only because I made this cake using a sugar substitue for a diabetic's birthday. Needless to say it was awful. So I am sure the cake is good just make sure to use real sugar!!

One Minute Chocolate Icing

Irish Whiskey Flat Iron Steak

I used this marinade last night with just a few changes. Used 1/4 cup oil with 2/3 cup of the whiskey. I also added fresh herbs as I have them growing in my garden and a low sodium soy. I chopped 2 green onions and used 2 cloves minced garlic. I was in a hurry so I could not marinate for long...so I let it sit in a freezer bag for an hour at room temp. Perfection!! The meat was tender and very flavorful. The extra whiskey really gives it a buttery soft taste and you can actually taste the whiskey. I hate recipes that use so little of the liquer you never really taste it at all. This way worked best. I then took the left over marinade and used it to deglaze a pan of sauteed mushrooms and onions to make a side dish. It was awesome. Will be using this all the time now for flat iron steaks. Thanks so much!

Hoagie Dip

Just awesome. Made this for New Years Eve party and was a hit! Super yummy and everyone was saying how much it tastes like a hoagie. I put the tomato, onion and lettuce off to the side of the dip so it didn't get soggy or too wet. Served with crusty bread chunks. I used ham, genoa salami and provolone cheese. P.S. You can get away with using low fat mayo with this since the flavors are strong and you do not get the usual overwhelming tanginess the low fat stuff leaves in your mouth.

Fresh Spring Rolls With Thai Dipping Sauce

Made these for a New Years party and they went over well with kids and grown-ups alike. Cut back on the cilantro a bit because the first batch I made it was just too much for my taste. We filled some with chicken pan fried in curry spices and some with shrinp. Very yummy!

I really liked this recipe. It was tasty but maybe a tad too sweet for me. I think next time I will use a bit less honey and use a little less of the bread and nut topping. I will make it again.

We liked these tasty little treats. Cut recipe to make six for my muffin pan. Was careful not to overfill the muffins and they cooked up really nice. Very tasty. I added some chopped red bell pepper I had on hand.

Actually Delicious Turkey Burgers

We made these tonight and they were great. Looked at some of the other reviews for ideas and here is what worked for us. Follow the recipe then add 1/2 teaspoon kitchen bouquet, shaved the onion on a grater, 1/2 teaspoon soy and worcestire sauce, used seasoning salt, then put them in the fridge for about an hour to help them "firm" up for the grill. Awesome with all the regular burger fixins!

Broiled Tilapia Parmesan

Very easy and tasty. I pretty much follow the recipe exact. Having read some of the other reviews I do add a touch of bread crumb to make the topping slightly thicker and that helps keep it in place. Once it starts cooking the topping has a tendency to "slip" off. So that helps. I have made this numerous times and it turns out great each time. Very good.
