Lime Muffins

Altered recipe from reading other reviews. 1.5 cups all-purpose flour / .5 cup whole wheat; egg substitute for 1 egg; 1/4 + 2 TBsp milk & oil; used powdered milk; 1/4 fresh squeezed lime juice; grated lime peel from a whole lime.

Herbed Potato Soup

Sweet Potato, Carrot, Apple, and Red Lentil Soup

Used olive oil and made it like a stew. The sweet potatoes were so soft you could smash a few to sort of puree it. Used a pinch of ground ginger instead of fresh since I don't care for ginger. Din't use the red lentils either - used what I had on hand, which was brown. Still tasted great! Will be making this again.

Pineapple Coconut Upside-Down Cake

Italian Bow Tie Supper

Added more stewed tomatoes and tomato sauce to the recipe. Bought those with Italian spices and then added the spices the recipe called for. Used a pound of bison meat that gave the recipe a different flavor. Hubby liked it so much he had a second plate.

Oven Fried Potatoes II

We used potatoes we received from the CSA instead of baking potatoes. Instead of vegetable oil we used canola oil. Also used sea salt and fresh ground pepper. After they were done baking we topped them with fresh grated Parmesan cheese. Tasted really good. We will be making them again.

Make Ahead Lunch Wraps

These are constantly made for a quick meal when there isn't time to eat. Pop in in the microwave and it's ready to go. We (husband & I) have tried to lower salt consumption by finding cans that don't have salt included. The brown rice can be replaced with 1 cup uncooked quinoa. This adds more fiber and protein.

Cabbage and Rice

Loved this dish! Didn't have a problem with cabbage cooking down in 10 minutes, just finely shredded it and cooked on low heat in a large cast iron pot. Also used jalapeño rings from a jar and think fresh jalapeños may make the dish taste even better. I do not recommend using the can combination of the tomatoes and jalapeños. As for others who thought the dish was bland - I was raised on a low-salt diet and this dish was great. If you love salt this dish may not be for you.
