Potato Leek Soup I

Cardamom Biscuits

These were pretty good. It was a base for an apple buckle. I halved the dough and added a dash of ginger and put it in the fridge. I sliced up 2 apples and tossed them with applesauce and cinnamon sugar and put them in an 8x8 baking pan. I rolled the dough on a floured breadboard into an 8x8 square and put it over the apple mixture and pressed it down lightly and sprinkled with cinnamon sugar. Cooked at 400 for 25 minutes.

Quinoa with Sweet Potato and Mushrooms

Pretty good but a bit bland. I added some cinnamon like mentioned and sauteed chicken. There was something missing. Next time I am going to add a chunked up apple and maybe raisins.

Apple Brownies

Good. I made a couple small changes. I used half white and half brown sugar and added a little nutmeg and cloves. I also added a topping of oatmeal, butter, and cinnamon. My boyfriend said next time I should add raisins too.

Sausage Cabbage Skillet

Fantastic! Probably even better tomorrow. Didn't have any pepper but otherwise followed the recipe. I did change the cooking directions. I also used the slicer on my cheese grater for the potatoes and they cooked up nicely as they were really thin and even. Saute the sausage and set aside. Add butter to the pan, saute the onions, add potatoes and worchestershire sauce, then finally cabbage. After about 5 minutes return sausage and cover for about 30 minutes, stirring occasionally until the cabbage is med-well cooked.

Butternut Squash Risotto

Amazing! I used a chardonnay with a slight oak finish for the white wine. I also added 1/2 lb of extra firm tofu to make it a main dish and 1/2 carton sliced mushrooms. I cut the tofu in 1/2" cubes and sauteed with onions and mushrooms in butter at the beginning. At the very end I added some ripped spinach to add some green and variety. Next time I am going to try Pacific Mushroom broth and keep it vegetarian. It is a piece worth showing off!

Ultimate Maple Snickerdoodles

Fantastic! They were a bit sweet for me the first time so I changed it a little the 2nd. I cut the sugar down to 1/3 brown sugar and 1/3 white sugar. I also added a 2nd egg to make them a bit fluffier and used real butter. A favorite! Bringing them to the in-laws this weekend. They should stand up to her amazing desserts without a problem.
