Better Brownies
Yum! I omitted the stevia powder and replaced half the oil with unsweetened applesauce. I baked them in deep 8" pie plate and baked until a toothpick stuck in the center came out with just a bit of batter on it (my thought is that the trick to making these taste their best is to underbake by just a smidge). I cut into triangles, drizzled melted dark chocolate on top, and sprinkled with cinnamon. Very dense and rich!

Big Soft Ginger Cookies
I realize I'm in the minority here, but these weren't my favorite. They were just ok. Almost a bit too spicy for me- I think I would've liked them better with 1/2 the amount of ginger. The dough was also pretty sticky, but no worse than a soft sugar cookie dough.

Vegan Brownies
Definitely the best vegan brownie recipe I've tried to date - I've made them in the past with oil and had disastrous results, so I used vegetable shortening. I followed the advice of another reviewer and mixed the flour and water together and let it sit for a bit before adding other ingredients. I also added a generous helping of dark chocolate chips and put some instant espresso powder in the water. The flavor is awesome and they are quite gooey even baked at maximum time, but they were still FAR too greasy. Next time I will consider halving the shortening. A great base recipe to work with.
