This is very good and easy. I actually put some in an ice cube tray to freeze and will probably make more to freeze since I have a ton of basil left to use. I will add salt next time though, it needed a bit. Someone else had suggested toasting the pine nuts first and that is great idea, it really brings out the flavor.

Quinoa Side Dish

Made this last night to go with roasted Swiss chard (another wonderful recipe from this site) and it was so good! I settled on this one since I had evertyhing it called for in the recipe and it was fairly quick to make. I even had fresh thyme which was lovely in this! Only thing I did not put in was onion, the Swiss chard had a LOT of onion and I did not want to overdo. I am loving Quinoa and always looking for new ways to fix it.. it is so healthy and filling.

Roasted Swiss Chard with Feta

We really liked this! My first time cooking chard and it was easy. Only thing I would change is cutting WAY back on onion. I probably had too much onion to size of the bunch of chard I used and it was rather overpowering. I most definitely will make this again.

Roasted Swiss Chard with Feta

Making for second time tonight and going to use goat cheese instead of feta (no feta in house) and also going to add walnuts.

Butternut Squash Bake

This is my go to recipe for butternut squash, I love it so much! Only thing I changed in it is I used panko breadcrumbs, since they are chunkier and crispier. YUM!! I keep wanting to make soup with butternut squash but just cannot stop making this recipe when I have one.

Kale and Quinoa Salad

Wow! Made this for dinner tonight and it is a winner! This was first time I have fixed kale, other than making kale chips. I was rather unsure how it would taste, it smelled really strong when I was tearing it into pieces. The reviews were so good I had to try. I'm so glad I did.. Only thing I changed was I put in dried tart cherries (didn't have currants). This is a keeper and best of all leftovers for our lunches. YUM!

Parmesan Crusted Tilapia Fillets

Very good! Might try baking and then putting under broiler next time for bit more crispy crust to it. Seasoning is great though and did not even salt it.

Hungarian Mushroom Soup

We both loved this! I had white button mushrooms and shitake mushrooms. So yummy and warming on bitter cold winter day. Making more again this weekend . Only thing I could not find was Hungarian paprika. I had some regular paprika I used.

Adrienne's Cucumber Salad

Love this recipe! Was the closet to what my mom used to make. Brings back wonderful childhood memories fro visiting my grandma and grandpa in Tennessee. Cucumber salad like this was always on the table. I only had one cucumber though.. Next time I'll make sure to have more.

Slow Cooker Fruit, Nuts, and Spice Oatmeal

It is good but like some others have suggested, I would add more liquid. General rule of thumb for cooking steel cut oats is one cup oats to three cups liquid. This did stick in my crockpot on the sides and bottom a little, even though I sprayed with cooking spray. I have a new crockpot that has timer and it will go to warm when finished cooking. I think a good addition would be vanilla soy or almond milk or coconut milk, just to add a tad of sweetness. My husband thought they were too dry and not sweet enough. I added milk when I heated mine up to eat and I like that it is not terribly sweet. Everything else about this recipe is terrific though and I will make again with some tweaks.
