Quick Quiche

This is great. I sauteed fresh zucchini and onion, then mixed that in with the egg mixture. I also eliminated the butter, as others suggested, and changed the flour to reduced-fat Bisquick, also as others suggested. It came out great.

Vegetarian Chickpea Sandwich Filling

I loved it and I love the texture. The only thing it doesn't specify is the size of the onion. I had half a large red onion and it was too much, and I love onions! I will use less next time. I pulsed the veggies in my food processor, then added the mayo, lemon juice and dill and pulsed a few more times. Then I added the chickpeas and pulsed just enough to give them the mashed consistency. Very easy.

Root Beer Float Cake II

My kids request this for their birthday cakes! I followed others advice - used 2 t. root beer extract in the cake (in addition to the root beer) and I used 1 container Cool Whip vanilla frosting, thawed, and used a whisk to whip 2 t. root beer extract into it (no root beer pop). Word of caution - the root beer extract adds a strong root beer flavor, which our family likes - you may want to start with 1 t. and adjust as needed.

Spicy Tomato Sauce with Sausage, Tomatoes and Cream - everyone likes

This was an excellent sauce that everyone in my family had seconds of. I'd give it five stars except I made a few changes - I used only 1 T. oil instead of 2 and a nonstick pan, 1 lb. sweet chicken sausage sliced, 28 oz. Italian style diced tomatoes UNDRAINED, only 1 c. cream, and I threw in about 1/4 c. pesto because I didn't have parsley. One daughter thought it was a little too spicy but she still had two helpings, so I'm not changing the proportions next time. The extra garlic and red pepper flakes really make it! Thank you for the recipes and for everyone's tips.

Bow Ties with Sausage, Tomatoes and Cream

Jen's Chorizo Pasta

The whole family loved this. My daughter asked for it again already, saying she's dreaming about it. My changes: halved the butter, used ground chorizo as I already had it; cooked onions and garlic together, then added chorizo, cooked, then added peppers. Left out mushrooms. I don't think my changes altered the overall flavor too much, at least I hope...if Jen reads this I think it's a great recipe. Thank you!

Artichoke Bruschetta - enough for 1 bag of bread - probably 2 mini baguettes

I made it in a hurry and didn't read any of the reviews, so I made it exactly as it is written. We liked it but agreed it could use a "kick." It is SUPER fast to whip up (put the artichokes in your mini food processor) and broil. I will make it again but will check out some of the additions others liked. Thank you - I love simple app recipes!

Death by Chocolate Mousse

Fantastic! I will probably make it in a 13x9 pan next time instead of a springform pan so I can cut it into smaller squares. I don't normally make my own cookie crusts but I had the Oreos so I made it in the food processor and kept it coarse - came out great. I used Ghirardelli chocolate. I used the second method for #3 but will probably make it in the microwave next time.

Zesty Succotash

Kids loved. Used black beans instead of kidney (just like them better). Cooked without hot pepper sauce at daughter's request and she ended up adding it after. Leave it in - it's not too spicy! You can always add more at the table, like we dii.
