Broccoli Cheese Soup V

I'm not a big fan of velveta, so I used 1lb cubed velveta and 2 1/2 cups shredded cheddar (both 2% milk brand). I also added approx 2 tsp minced garlic to my fried chopped onion. (garlic will burn, so add after the onion has cooked for a couple of mins) I also added 4 large potatoes (cubed and with skin on)to the broccoli to cook in chicken broth until fork tender. We like our food alitte spicy, so I added some cajun seasoning and a few hot pepper flakes. Excellent recipe,I didn't miss the extra fat at all- do you really need it with all that butter? Serve with some hot rolls and you got supper!

Coconut Macaroons III

OMG, these cookies are soooo good and sooo easy to make. I followed the recipe exactly, except I added about 1/2 tsp. of almond extract in addition to the vanilla. I mixed the extracts with the condensed milk before adding to the coconut mixture. Wetting your hands with cold water before shaping the cookies helps keep the sticky batter from sticking to your hands. (a 14oz pkg coconut = 51/2 cups) After the cookies cooled, I drizzled them with semi-sweet chocolate. (put about 1 cup of chips in a qt. freezer bag and microwave for about 90 sec.- "squishing" chips after every 30 sec.- until melted- then snip a very small corner out of bag and drizzle over cookies.) The whole house smelled like toasted coconut. Oh, I also sprayed the foil with Pam with flour before placing my cookies on it- they came off very easy. I will never make another coconut macaroon recipe.

Thin Mint Crackers

drain the fat off your meat so the soup isn't so greasy, and I also used ground sausage. Excellent!!!

Try dipping the graham crackers in milk before layering (it will be ready to eat quicker) and melt the icing first- sooo easy and yummy!

Cha Cha's White Chicken Chili

If you're short of time, try using 2 cans of the 98% fat free chicken (found where you would find can tuna). I broke up the chunks of canned chicken with a fork and added the chicken along with the broth to the chili mixture. My husband also added a can of diced tomato to his. (I'm not fond of tomato) To make the broth a little thicker, I followed the advice of another review and pureed one the cans of white beans before adding to the chili. This is very spicy, and I even left out the cayenne pepper. Very good if you like things hot!
