Roasted Asparagus with Balsamic Vinegar

Artichoke Stuffed Mushrooms

These were delicious. The only changes I made were I sautéed 3 cloves of garlic after the onion step, added a hint of cayenne pepper to the mixture and used fresh mozzarella in place of the Italian blend cheese. Thank you Anita!

Exchange Gang Pasta with Shrimp

I did add a couple shakes of red pepper flakes, used diced can tomatoes Italian style and fat free half and half. I also doubled up on the veggies. Super delish!

Slow Cooker Spicy Black-Eyed Peas

I sauted the veggies, added a couple chopped carrots in a tspn olive oil till soft. I used 3 cans (14oz) low sodium chicken broth, omitted bacon and salt. Cooked on high for 4 hours then on low for 2 hours! A delicious Happy New Year!

These were insanely off the chart delicious. I didn't have any crystalized ginger to add. I will find it and make these again! Topped with cream cheese frosting II from this site and they were gobbled up by my coworkers in no time at all. Thank you for this memorable recipe!!

Tuna Noodle Casserole

Made a few changes to this delicious recipe. Used red bell pepper, added 1 cup frozen peas, olive oil, fat free half & half, sharp cheddar cheese, three 3 oz cans of albacore tuna, omitted the pimiento and light mayo all topped off with French fried onions. So yummy!

Penne and Vodka Sauce

Delicious and easy to prepare. I also substituted fat free half and half added 2 cloves of minced garlic at the end of the pancetta browning step and sprinkled with a touch of red pepper flakes. Thanks Rick for the recipe!

Chorizo Stuffed Bell Peppers

Modified to what I had on hand. Used 12oz chorizo, omitted carrot, 1 can chopped tomato, cilantro in lue of the basil/parsley, cooked a batch of Spanish rice and added, layered cheddar cheese in the middle of the stuffing and topped with the peppers. Omitted the tomato soup and they turned out moist and delicious.

Raw Veggie Picnic Salad

This was a big hit at an end of summer BBQ. I used maple bacon and dried cherries since I had them on hand. I did steam my broccoli for about 5 minutes and the color was bright green. Cut back on the mayo (light) and sugar slightly. And I did toast the slivered almond since it's so quick and easy with a great toasted nutty flavor. Delicious....!!! Thanks for a yummy recipe!

Cranberry Sauce Chicken II

I followed the recipe exactly except I cooked the thighs covered with foil for 1 hour 15 minutes and uncovered for 15 minutes. I also broiled them for a caramelized skin! Delicious juicy and succulent chicken! Next time I'm going to add a pinch of red pepper flakes to add a touch of spice. Thanks Honda!

Baked Teriyaki Chicken

These are the slight changes I made. Doubled the sauce for 4 large bone in chicken breasts. Used low sodium soy, rice wine vinegar, and half white and half brown sugar. Poured the sauce over the chicken and baked at 400 degrees for 15 minutes then turned oven down to 350 for 30 minutes basting often. Moist and delicious used in my Chinese Chicken Salad!!

Sloppy Joe Sandwiches

This was delicious with a few modifications. I used only half of the stated brown sugar, subsituted 1/4th of the ketchup with BBQ sauce and added 1 tspn of chili powder, apple cider vinegar and hot sauce. Mmm, mmm, mmm good!
