Buttermilk Mango-Berry Crumb Cake

We loved this! I love that it's not too sweet, which makes me feel better about giving it too my kids. I used mangoes and strawberries...fantastic. The only thing is I used an 8x8 pan and it needed longer to bake. Will definitely make again!

Baked Potato Soup

Tortellini Pesto Salad

This was a huge hit at our cookout. I made it like it says only with black olives and I added chicken. I thought the creamy dressing was really good and wouldn't have wanted it any other way. Awesome!

Zippy Beef Bake

We really liked this recipe. I used extra cheese (I used colby jack) and added a fresh summer tomato or two which added a nice dimension. We'll keep this one around!

Dutch Leek Casserole

I love this recipe. It's so easy to play with and add what you have in your kitchen (although I suppose that's the definition of casserole!). I have made it as is and I've also made it without the peppers and chilis and instead substituted some zucchini I had on hand. It was just as tasty.

Blueberry Zucchini Bread

Sizzlin Island Marinated Pork

Lisa's Herbed Eggplant Medley

This recipe is very fresh-tasting and the herbs are wonderful. However the suggestion to bake the eggplant was not a good idea. It made my eggplant mush so I couldn't include it. I instead diced a raw yellow squash I had on hand and tossed it in the oven with the other ingredients for the recommended time. This worked out really well. My onion was nice and mild so, even though it retained some crunch, its flavor wasn't too strong. Quinoa is one of my favorite grains (worth a try if you've never had it!) and it went really well with the other fresh ingredients. This is a great one for dinner after a summer trip to the farmer's market.

Double-Chocolate Strawberry Shortcake

This was good...but plan to eat the whole thing! It turns soggy quickly. My kids loved it though. It's hard to keep it in the shape of a cake since it wants to mush everywhere, but despite the appearance it gave it tasted really good!

Chocolate Mint Cheesecake Bars

These were awesome. The four stars is only because of the mistakes in the recipe. I read the reviews first which helped. I used an 8x8 baking pan and baked it at 325 for 25 mins and then at 300 for 15 mins more. The key is to make sure that the middle is nearly as high as the edges...then you know it's done. I also turned the oven off, cooled it a little bit, and let the dessert sit in there for about 20 mins more as the oven cooled down. It turned out wonderfully and was a huge hit at our pot luck. My husband is already asking for me to make it again. Yum!
