Shrimp, Leek and Spinach Risotto

Excellent recipe. I double the amount of scallops and used green onions instead of leeks. I also added one extra cup of warm water with two cube of buillon.

Five Cup Salad

I sampled this at a recent lunch. Since I asked for the recipe, obviously I enjoyed it. The chef substituted 1 cup of frozen blueberries for the fruit cocktail. Very refreshing. I think grapes would be a nice addition too.

Chicken Tortellini Soup

Very hearty soup. I also added carrots, 1 small zucchini and green pepper. I used a can of crushed tomatoes I had and omitted the spinach. the parmesan was a very nice touch. Green beans or white beans would be great too. Served with Peasant Bread.

Chicken Tortellini Soup With Zucchini and Tomatoes

I used homemade chicken stock, added carrots, green pepper, crushed tomato, and about 2 1/2 cups cooked chicken and 1 bag of frozen tortellini. Very good hearty soup. Next time I might add different veggies or some beans.

Chocolate Velvet Ice Cream

I used 3 whole eggs and half cream/half milk as recommended by one reader. I was disappointed by the lack of intense chocolate flavor. Next time, I may double the cocoa. Otherwise the flavors were good.

Chicken Tostadas

I love tostadas! I made these vegetarian by omitting the chicken. I purchased refried black beans to save the blender step. The cumin and chili pepper we perfect. I also added salsa, corn and green peppers to the top. Next time, I will try to use guacamole too. Very pretty and tasty.

I made a few modifications. I used skim milk and added cocoa and little sugar. I had frozen sour cherries from last summer and omitted the banana. Very good and filling.

Chicken Katsu

I am a frying novice and had trouble finding the right oil temperature. It was too cool when I started and the chicken absorbed too much oil and took awhile to cook. The flavors were still excellent! I served with a warm sauce of honey, mustard and white wine.

Frozen Chocolate Pie

This was quite easy to make and delicious. I substituted real heavy cream for the whipped topping and added the sugar and cocoa when it had soft peaks. I added the milk and vanilla to the cream cheese then whipped everything together. I think I may have lost some volume with this method. I used an Oreo chocolate cookie crust. And it looked a little empty. Great flavor though!

Nat and Darcy's Amazing Eggplant Lasagna

I made a number of modifications so bear with my "review". I used half an eggplant, 1 small zucchini and 1 small yellow squash. I sliced each very thinly and didn't salt or sweat. Instead of red sauce, I used 2 c of ricotta mixed with 2 eggs and italian seasonings. Lastly, I substituted prociutto for the bacon. The results were very good.

Vegetarian Open Faced Sandwich

I made a few changes and loved the delicious results. I substituted goat cheese for the mozzarella, grilled the eggplant, omitted the onion and grilled the sandwich. Yummy.

Shepherd's Pie II

I made half the recipe to produce two individual (rather large) crocks. I'm not sure how the original recipe would feed 16! I added 2T onion and 1 clove garlic to the ground beef. I added about 1 teaspoon each nutmeg, sage, salt, pepper. I thought that it still needed more sage. I used leftover mashed potatoes for convenience. Overall a very good recipe. Next time I will use ground lamb.

Slovak Stuffed Cabbage

I was striving to mimic my Grandma's and while this recipe was good; it didn't match hers. I omitted the sauerkraut and bacon and added an extra can of soup as suggested by other reviewers. I will make it again after polling other family members for advice.

Cannellini Bean Salad

I used this recipe to make a hummus-like spread. I sauteed onion and garlic and added them with 1 roasted red pepper to the food processer. Pulsed until smooth then added one can of beans. The spread was tasty on grilled portabellas and toasted pita chips.
