Old Fashioned Mac and Cheese

Fondue Bread

This bread is delicious. I used 1 lb of muenster and that was plenty for my cheese-loving family. Leftover slices were heat in the microwave for 30s to make yummy and melty.

Summer Squash Chicken Alfredo

A very good recipe. I added three bell peppers and used 12oz Roasted Pepper Alfredo. I think a little more sauce would have been great, but I love sauce. I thought it was quick and easy with minimal clean-up (two pots).

Hearty Multigrain Bread

Delicious bread. I substituted poppy seeds and extra sesame and sunflower seeds for the flax seeds. Otherwise, I followed the recipe. The bread is lihgter than I expected and just wonderful.

Bierrocks I

The final product was too much dough and too little filling. Both tasted good but the wrong ratio was disappointing. This it probably a result of my poor stuffing technique. I would like to try it again and hope for better results.

Bagel Bread

Yummy bread. I mixed in the bread machine and baked in the oven. I baked at 375*F for about 35 minutes using a 8"x4" loaf pan. The taste was not exactly like a bagel, but close enough.

English Muffin Bread

Italian Wedding Soup I

Light Oat Bread

Lovely bread it tastes a little nutty to me. I used bread flour. I mixed in the bread machine and separated in to two small loaves. Baked the next day 45 minutes at 350*.

Una's Cheddar Beer Bread (bread machine dough cycle)

Great bread. I added the cheese by hand then let the loaves rise in the pans. Baking for 1 hour at 350*F was too long, maybe 50 minutes next time.

Lentil Pepperoni Stew

A simple, hearty stew great for a cold winter day. I doubled the pepperoni and used 1 28oz can of tomatoes. I cooked all the vegetables and pepperoni for about 45 mintues then added the lentils for another 20 minutes. I topped with shredded cheddar cheese.

BUSH'S® Southwestern Black Bean Cakes with Grilled Shrimp

This is a good recipe. I needed to add 1/2c flour (or cornmeal) to make the beans the right consistency. Served with chipotle flavored sour cream and guacamole.

Chicken Pot Pie IX

I used the picked a roasted chickend and its drippings instead of butter and stock. I used 1/4c flour and 1/4c cream and 1/4c milk for the gravy sauce. I also added some leftover bell peppers and potatoes. A great recipe.

Peanut Butter Cup Ice Cream

My quest for an excellent Peanut Butter Ice Cream ends here. This base is fantastic and the Peanut Butter cups are a nice addition. I substituted skim milk for whole. I replaced the condensed milk and half-half with 1 1/4 c heavy cream and 3/4 c sugar. The first batch is almost gone! Yummy.

Six Can Chicken Tortilla Soup

I used leftover turkey instead of canned chicken. This soup was easy but not very impressive. Something was missing. If I make it again, I will add masa for texture, onions, green peppers,avocado, sour cream and mont-jack cheese. I buy a starter tortilla soup mix that is much better. Sorry.

Blackberry-Chocolate Chip Pie

This pie was excellent. I omitted the lemon juice so the sweet/sour contract was a little off and the result was too sweet. Next time, I will reduce the sugar to 1/2 c or increase the number of berries to 5 cups or add the correct amount of lemon juice. I did think more berries would be nice. I used berries from last season frozen at the peak ripeness.

Shrimp, Leek and Spinach Risotto

Excellent recipe. I double the amount of scallops and used green onions instead of leeks. I also added one extra cup of warm water with two cube of buillon.

Five Cup Salad

I sampled this at a recent lunch. Since I asked for the recipe, obviously I enjoyed it. The chef substituted 1 cup of frozen blueberries for the fruit cocktail. Very refreshing. I think grapes would be a nice addition too.
