Actually Delicious Turkey Burgers

Berry Oatmeal Muffins

I thought this was good, but I also made some edits. I omitted the wheat germ and in place used wheat bran. I omitted the oil and in place used applesauce and 1/2 smashed banana. I baked 30 minutes in convection oven (perfect time) using my silpat muffin pan. Muffin was moist. The topping was yummy (my kids will probably eat the topping first, and if the blueberries were not baked inside the muffin, they'd probably leave the rest). Might try again.

Broccoli Hamburger Casserole

tasty, i would make again. I didn't have cream of celery so I used cream of mushroom. I browned the onion, mushrooms and added 1 garlic clove, dash of rosemary/thyme with the salt and pepper. I used fresh broccoli and carrots, steaming them in the microwave for about 7 minutes w/ ~ 2 tablespoons of water. I followed another reader's advice and added cooked egg noodle to the bottom of the dish. It was okay, they stuck together so it would have been helpful to toss w/olive oil or butter before the bake.

Broccoli Chicken Delight

I remember tasting a dish very similar and I like it! I made the suggested changes of 1/2 cup mayonnaise and the Ritz crackers. I used the Trader Joes frozen broccoli and steamed it in the microwave before mixing and baking the dish. The end result was good, although 1 hour covered in Pyrex at 350 produced crispy cheese and toasted cracker crumbs. Next time, I will reduce the oven time and maybe remove the crackers.

St. Patrick's Day Zucchini-Oatmeal Cookies

good soft cookie. i didn't have granola on hand so I put 2 cups of oats in the mix. I think next time, I will use brown sugar instead and maybe add another spice to kick it up on flavor (maybe the granola would do that?).

Creamy Chicken and Wild Rice Soup

Tasty recipe! Like many others, I too started with browning onion, celery, carrots and garlic. Rather than make my roux later and blend, I chose to start my veggies in 6 tablespoons of butter, and after 5 minutes, added my 1/2 cup off flour before adding my 1 1/2 cup of plain wild rice and 4 cups of Better Than Boullion Chicken broth (I am not a fan of packaged seasoned rice), brought it to a boil, than simmer for ~50 minutes. At the end I added 1 cup of half-n-half and 1 cup of skim milk. Seasoned with coasher salt and pepper. It turned out creamy and delicious. Next time I might experiment with herbs like Thyme or Rosemary.

Chicken Shepherd's Pie

I made this recipe by memory, and I forgot the cheese. Nonetheless, it turned out yummy and it will probably taste even yummier next time. I figure I can use any left over beef/chicken/pork to make this pie! I did add 1/2 chicken stock to the raw veggies before topping with the mashed potatoes. My potatoes were prepared with 1 clove of minced garlic, 1/4 cup of sourcream, 1/4 cup of milk and a dash of kosher salt. Summary...keeper recipe!

Slow Cooker Lentil and Ham Soup

Very tasty. I didn't have slow-cooker time allowance so I did a quick 1 hour stovetop version. Used all ingredients minus the 1 cup of water. Used 1 tablespoon of olive oil to cook the veggies for ~10 minutes. Added lentils, broth, herbs, brought to a boil and reduced to a simmer for ~ 1 hour. Served with fresh baked bread and cheese. Yummy.

Beefy Potato Volcano

I followed the recipe using ground turkey and made a couple of changes. I used fresh cut carrots and like another cook, I made my own gravy (a 3 cup roux base with organic beef Better than Bouillon). I thought the recipe was bland and needed something more. I think with my leftovers, I plan to make soup.

I followed the recipe exactly. While the flavor was nice, the texture was a little like "sand" as my 3 year old stated. The Italian seasoned bread crumbs was too fine.

Chicken Florentine Casserole

I thought this was a tasty dish. I used my skillet to brown the bacon. Drained the bacon grease. Put 2 TLB of butter in the skillet, browned ~ 1/3 cup diced onion, 1 garlic clove, the splash of white wine (good suggestion by others), the Italian seasoning, drained a can of mushrooms and added that. After 1 or 2 minutes of saute, I added the spinach. After 1 or 2 minutes, I added the cream of mushroom soup, lemon juice & half-and-half. Once that was all mixed, I added the Parmesan cheese. I poured this into the 9x9 pan, sprinkled the bacon bits on top and because I didn't have Mozzarella cheese on hand, I used an aged white cheddar. In the oven for 25 minutes and it was great over noodles! A keepr recipe!

The Best Rolled Sugar Cookies

I found it helpful to keep my pastry mat dusted with flour to help reduce dough sticking. I also found it helpful to keep the dough refrigerated. I cut the dough into quarters and work with them one at a time. My batch yielded 62 cookies! :-)

Classic Peanut Butter Cookies

Super easy and tasty. I refrigerated the cookie dough overnight and it baked up nicely the next morning. It was a fun activity w/my 3 yr old who liked to roll the cookie balls in the sugar.

I doubled the recipe with the exception of the teriyaki sauce, and having to add a 3rd egg to bind the patty better. I only added 1/4 c of teriyaki sauce and it was OVERPOWERING! I would only add maybe 3 tablespoons if I decided to try it again.

Tex-Mex Turkey Soup

This was very tasty! I didn't have condensed tomato soup so in place of that and the 4 cups of water, I used 3 cups V-8 juice and 1 cup water. This is a keeper!
