Authentic Mexican Chili Rellenos

Reviewed: Sep. 29, 2012
I've always ordered these when eating out so when I came across the most gorgeous peppers at a farmer's market I knew I had to try to make them myself. After looking up several different recipes online I chose this one due to the reviews and the clarity of the directions. Needless to say, they turned out PERFECT and my family requested a repeat dinner 2 days later!

Picnic Cake

Reviewed: Jan. 24, 2012
This cake is definitely tasty! However I will call it Ugly Cake instead of Picnic Cake. I had read several reviews beforehand though so it wasn't any surprise. I'm really glad I did because if not I would of had a completely burnt top! I baked it at 350 as directed but set my timer for 35 min. Checked it after 25 min and the cake was just then done inside, the marshmallows rose to the top and melted but already had burnt polka dots across the top. Still very yummy to me as I like the flavor of burnt marshmallow. Essentially this tasted like moist banana bread with a toasted marshmallow crust. It worked out nicely considering I just wanted to find a recipe to use one sad black banana and happened to have marshmallows too. The only thing I didn't have on hand was buttermilk so I used 1/2 tbsp lemon juice mixed into 1/2 cup regular milk which is a well known buttermilk substitute (you can use white vinegar too if you don't have lemon juice). I like this recipe since I can omit the marshmallows in the future to just make a great banana cake. I have friends who love Banana Moon Pies and this would be right up their alley. With the marshmallow craters maybe call it Banana Moon Cake? Thank you for posting!

Easy Bacon and Cheese Quiche

Reviewed: Dec. 15, 2011
I have made quiche so many times with this recipe (2 or 3 times a month) and have to say that this is the perfect base recipe! Couple of notes - the recipe doesn't specify but I recommend a deep dish crust. Also I have made mine with milk every time as cream isn't a regular item in the fridge - I add an extra egg too since milk isn't as thick as cream. Don't forget to wrap thin strips of foil around the crust so it doesn't burn. Our family favorite is minced garlic, green pepper, diced sausage links, with provolone cheese, and parmesan sprinkled on the top before cooking makes a crispy golden crust on top. Super yummy. Thanks for posting!

Easy Garlic Chicken

Reviewed: Aug. 25, 2011
This was wonderfully easy! We have used the same recipe in the past but we used olive oil instead of butter. We would prep the garlic and olive oil early in the day to enhance the garlic flavor. However, the olive oil gets very smoky in the oven while cooking and the butter obviously does not. I will be using butter from now on. Next time I will prep the butter and garlic ahead of time to get more garlic flavor and mix parmesan with the bread crumbs. Thanks for posting!

Garlic Chicken

Reviewed: Jul. 27, 2011
This is one of those recipes that is ridiculously easy and tastes, well, professional! I love that I can prep the oil/garlic and the dry coating early in the day and then pull it out when it's time to make dinner! Hint: crushing up some french fried onions and adding them to the dry coating is a great addition. Thank you so much for posting - this is a keeper!

McCormick® Stuffed French Toast

Reviewed: May 8, 2011
Wow! Why haven't I thought of this before! I used regular cream cheese and heated it up to soften. I didn't use cinnamon since I was using strawberry preserves. I assume the recipe meant to soak the sandwiches for 2 seconds not 2 minutes as that would have made them too wet and they would have fallen apart when handling. Didn't need butter since I used my nonstick griddle. Served them up with powdered sugar and fresh strawberries I had prepared earlier on top. No need for syrup! Absolutely delicious! Thanks for posting!

Cranberry Dip

Reviewed: May 1, 2011
I have zero interest in cranberry sauce but always felt like it was an essential part of the holiday season. This recipe has saved cranberries from being left out of my holiday dinner. This is the only way to eat cranberries. It is so good with pretzels that I crave it. Thank you!

Dirty Diapers

Reviewed: May 1, 2011
When I ask my son what he would like for lunch he often replies with something crude (poop!), so it was nice to settle the score and tell him he's having Dirty Diapers for lunch. Thanks for posting!

I have made this dish many times and I absolutely love it! Sometimes I add raisins or cherries and other times I'll use a sweet bread. It's great hot or cold. Thank you so much for posting this recipe!

Barbecue Beef Cups

Very easy and versatile! I will try this again with other fillings. My mother used to make a casserole with crescent rolls, BBQ beef, and cheddar. This recipe is like the kid friendly version. Thanks for posting!

Cream Cheese Penguins

Reviewed: Dec. 28, 2010
These are awesome! The hardest part is just picking through the olives for uniform appearance! I bought 2 sizes of olives (medium & large) but they ended up still looking the same size so I would suggest buying, say, small & large or medium & jumbo to save some work. Also use whipped cream cheese and pipe it from a ziplock bag with the corner snipped - it makes filling them a lot easier! Thanx for posting - they were a big hit with the guests!

Soft Christmas Cookies

Reviewed: Dec. 28, 2010
This is now my only sugar cookie recipe! I did reduce the flour to 3 cups and I used powdered sugar for the rolling and cutting. I also took the advice to cut them thick (at least 1/4 inch) and cooked them at 350 for 6 minutes and reduced that to 5 after batch #3 (the oven is pretty warm by then). They turned out PERFECT! Thanx for sharing this recipe! BTW: use Butter Icing by Barbara (on this site) and you'll have a cookie worthy of a blue ribbon!

Butter Icing for Cookies

Reviewed: Dec. 28, 2010
This is a keeper! It's easy to make and is absolutely delicious! It reminds me of those sugar cookies with the pink frosting you find at the stores! I do recommend taking the advice of another reviewer to keep the frosting over a pan of simmering water while frosting as it does become gritty as it cools and makes frosting a little difficult (it will lift off the cookie as your spreading). Keep it warm and it's easy to use. Thanx for posting!

Slider-Style Mini Burgers

Reviewed: Dec. 2, 2010
This is an excellent recipe for a quick ground beef dinner! I followed the advice of other reviews and didn't use a baking sheet, sprayed the foil with Pam, and had to adjust for 12 instead of 24 but still used the recipe as written, just cut in half. Thank you for posting!

Seattle Cream Cheese Dogs

Reviewed: Sep. 4, 2010
OK, I've lived 20 minutes outside of Seattle my whole life and I've never heard of nor seen this until randomly searching hot dog recipes on this site. So, of course, I had to try it... Boy, have I been missing out! Needless to say, cream cheese will be in the basket with the buns and dogs when I'm shopping for 'Ballpark night' from now on!
