Oven Fried Chicken III

The breading was good (I cut the thyme a lot), it stuck to the chicken very well, but it was not crispy and didn't remind me at all of normal fried chicken. The breading texture came out like microwave chicken nuggets. I think the cooking method is to blame, and would try the breading mix again but change the oven temp.

Spaghetti Squash I

Never having cooked spaghetti squash before I think the 30 minute bake time is not long enough. I mean, the squash was pretty crunchy. So I can't give a great review because the texture was very strange. I couldn't really even taste the other flavors, either. Just tasted like squash. Which is alright, I like squash, but seemed a waste of expensive ingredients.

Best Cream Of Broccoli and Potato Soup

I made this as written. BLAND. Bland. I can't stress that enough. Once I messed with it a lot, it was okay. I noticed that, as usual, many of the positive reviews changed the recipe a lot. This is not helpful. I will not make again.

Cream of Mushroom Soup I

I didn't have sherry, but other than that I made no changes. Super good! Wasn't sure how much 5 cups of mushrooms would be, so I just used 8 oz of baby bella mushrooms, and that seemed right.

Winter Squash Rolls

It wasn't terrible. Seemed like too much liquid. Also, the bake temp was too high and the bottom of the rolls got tough. I halved the sugar and it was still very sweet for a dinner roll. Probably won't make again.

Fresh Corn and Zucchini Saute

Great! I made as written except I reduced the butter by half. With fresh veggies this dish is perfect with just salt and pepper. On a side note, I would not try this with olive oil because it doesn't brown like butter, and the butter flavor is excellent.

Slow Cooker Chicken Stroganoff

Very good, and easy. My slow cooker runs hot, so I added some water so the chicken wouldn't dry out. At the end, when I was adding the condensed soup and cream cheese it was very thick, so I added some milk. Will make again.

Three Ingredient Peanut Butter Cookies

I think these are the first cookies I ever made, years ago, with my grandma. I love making them with chunky Adam's peanut butter, since that brand doesn't add sugar or hydrogenated oil. The recipe should mention to press the tops down with a fork. I think that does make a different.

Monday Night Mac and Cheese

This is super good and easy. I made as written, including the cream. It tastes like plain mac and cheese, which is great (not bland) but it's easy to add spice or anything you want to kick it up.

Penne with Chicken and Pesto

Quite good as written, and even better the day after. I choose to eat smaller portions rather than a larger amount of fat-free, so instead I reduced the serving of pasta, and had a large side of steamed broccoli and cauliflower. Good and filling.

Chocolate Trifle

I was asked to make a trifle, and everyone liked it. So it's a crowed pleaser. Personally, all the packaged and boxed ingredients made me think of something I would eat at a school cafeteria. Overly sweet and one-note. Still, others liked it.

Salmon Cakes II

I made this just as written. The outside was crispy and did hold together. That is the only good thing I can say. The inside was mushy and spongy and the only flavor was of onion. I am cranky that I didn't notice how 99% of the reviews changed the recipe significantly. I would not make this as written again, and don't want to try to mess with it to make it good.

Quinoa and Black Beans

Thank you for introducing me to quinoa! The package said that it was pre-rinsed, so I didn't rinse. I didn't soak either. I subbed chicken broth, doubled the cilantro, halved the beans. So good! The texture seemed right (although I have no prior experience) soft but not soggy. Add a spoonful of salsa on top and it's perfect!

Split Pea Soup

Can't stop eating this... I boiled the ham bone separate, removed the bone and cut up the meat, then dumped all the veggies, meat, and peas in the broth. Boiled until it was thick. I used more water to start with, and added a bay leaf and garlic. Didn't have the marjoram. I didn't soak the peas, the package said it wasn't necessary. I didn't add the salt, and it was plenty salty.

Meat Pie (Tourtiere)

I didn't change anything except I didn't use the egg/nutmeg at the end and added spices. When I tasted the meat at the end of the hour of simmering I was shocked at how bland it was! I could barely taste the cinnamon. Based on the reviews I thought the flavor would be stronger. I added tons more spices and salt including cayenne powder. I wanted bold flavors, to taste like a meat pie I remember from years ago.

Fish Tacos

I've never had fish tacos before, so I don't have any reference other than my first reaction. I followed the recipe except the beer batter. The sauce was on the spicy side, and although I liked it, the combination of fish, cabbage, and sauce did not do it for me. I even added cilantro and good pico de gallo. It seemed like lettuce would be better, and maybe onions. I'm sorry I can't explain better.

Baked Ziti I

Very good, however I did alter some things. I had penne pasta, and only one jar of sauce. I didn't have provolone, so I used all mozzarella. Used mild Italian sausage instead of ground beef. I generously ground black pepper into the sauce while it simmered. Baked it in a deep dish casserole for only about 20 minutes (pasta and sauce were still hot, only the sour cream was cold) and it was perfect. Not DRIPPING with sauce, but not dry either.

Creamy Chocolate Frosting

I replaced 3/4 cup powdered sugar with Ghirardelli cocoa mix... The taste was excellent, but the texture quite grainy. It was probably the cocoa mix (although the mix is a powder). I read other reviews of it being grainy, though. It's so easy that it's worth another shot.

Hot Tamale Pie

This was just okay. Nothing special. I halved the beef, and it was plenty. I only cooked it for 45 minutes and it came out pretty dry. Thankfully, I read other reviews and added tons of onion, garlic, and other spices to the beef. I also used my favorite spicy salsa, so it had a nice kick to it. But the crumbly-sweet cornbread was not style. If I tried this again I would make my own cornbread, with little or no sugar.
