Low Carb Pancake Crepes

I've cut the bread, pasta and rice which leaves me with limited options. I'm so happy to say that this recipe is a five star keeper with no modifications needed! The great thing about this recipe is you can change the flavor profile for variety. You could add flavored cream cheese/syrup for a change of pace. Omit the cinnamon and add in savory herbs, spread with hummus, or avocado, add in turkey & fillings to make a lunch wrap. (be gentle though because it can be rather fragile). Also, I find that Walden Farms makes a huge variety & the best tasting sugar-free syrup, which can be found in any health-food store. UPDATE: Made these for the hubs & daughter & they loved it! He HATES yolks- scrambled eggs (egg whites only), mayonnaise, aioli, hollandaise, etc. But he LOVED the crepes. I coated a 12" pan with the batter, once cooked on one side slid it onto a plate and flipped it back into the pan to maintain a pretty & perfect large, but thin crepe. I cooked it through then let it cool a tad. I added sugar-free cool whip and wrapped it, then drizzled Walden Farms sugar-free blueberry syrup. YUM!

Blueberry Zucchini Bread

I subbed the following: a little more than half flour for whole wheat pastry flour, half oil for applesauce, half sugar for Splenda. The extra fiber made it more filling and satisfied my hunger, so one slice with coffee will be enough for breakfast. I used less blueberries (BB) than called for because my BB were huge! I'm so glad I used less! Next time I'll use dried BB because while I like the flavor I didn't like the extra globs of moisture. This will be a staple recipe for me, and will be used in variation by adding nuts or dried cranberries, pears, etc. I sprinkled the top with a little sugar for a little crispness...the family is going back for seconds as I write this review and my husband hates vegetables!

Roasted Beets and Sauteed Beet Greens

I roasted it 1.25 hours but it was still a little too crunchy. Peeling it after roasting in oil wasn't such a good idea considering how slippery it was :/ The flavors were pretty good. I didn't have red wine vinegar, so I just used red wine vinaigrette right across the board. I think in the future I'll steam it long enough to be able to peel it, then cover and roast it.
