Sweet Potato Pound Cake

I have been making this recipe for years and it is always a hit. Instead of a tube or bunt cake pan I use two loaf pans (This recipe will make enough for two loaf pans). I bake till a toothpick comes out clean. I start checking around 45 minutes into the baking.

Old Fashioned Chicken and Dumplings

FINALLY a good chicken & dumplings recipe! This is the 4th one I tried. I was let down by the shortcut recipes that use canned soups and biscuits. My family loved this recipe. I cut the recipe down to 8 servings. I used chicken thighs with the bones and skin because it really adds good flavor. I followed the recipe except I did not have fresh parsley so I used dried. The conversion rate is for every 3 teaspoons of fresh herbs you will use 1 teaspoon dry. One reviewer said the dumplings were dry. I made several size dumplings and found if too large the middles tend to be dry. The perfect size seemed to be a spoonful about the size of a small walnut. My family loves dumplings so I made extra. The dumplings use the broth so the more dumplings the less broth left for your gravy. Next time I will use more broth to start. At this point you will take out the dumplings and chicken. I pulled apart my chicken, removed the bones and skin and returned the chicken to the pot. When it says to press out the “veggie liquid” that means to strain your juices with a strainer then press the onions and celery in the strainer so you don’t have large hunks in your gravy but still have the juices and flavor from them, then dispose of the remnants from the strainer. The recipe did not designate how much flour to add to thicken the broth to gravy. I just went a tablespoon at a time and whisked it in and waited a minute and repeated till it thickened up.

Lemon Pie Bars

From reading the reviews there is a lot of debate on how much crust, how much filling, how sweet the filling should be. I thought it was prefect as is. The crust is thick enough that you know that it is made of shortbread and the filling is thick enough to really add some wonderful flavor. I also was happy with the sweetness too. This recipe makes a rather sweet filling.

Crustless Bacon and Cheese Quiche

My family really liked this recipe! I did leave out the mushrooms because we are not fans but anyone who loves mushrooms I am sure they will love this too. I made a half recipe size and cooked it in a small 2L casserole dish. It still took almost 30 minutes to be fully cooked. I plan on making this one again!

I made a double batch of these for a party and they were gone in 20 minutes. Oh, it took longer to bake then I expected. I had to keep them in the oven for 20 to 30 minutes for the bacon to be cooked well.

Instant Oatmeal Mix

Wish I could rank this 4 1/2 stars, my family eats oatmeal enough that this could save us some money which is great! The flavor was good but next time I make it I plan to leave out the cardamom (I think that was the flavor my 7 year old was not thrilled with). Oh another thing I like about this recipe is I have been watching my weight so this gives me the option of a nice quick and easy breakfast and I can put as little or as much of the mix in as I like. I don't have a choice with the packets.

Bacon Cheese Frittata

I really liked this recipe. I plan on making it again. Next time I will not add the additional salt. Between the salt in the butter, bacon and cheese I think the 1/2 tsp was a little too much for my taste. Other than that I loved it and look forward to making it again with some tomatoes and peppers added in.

Cherry Magic Cookie Bars

I made these twice and both times they tasted wonderful but I did have trouble with the bars falling apart the first time. I used a generic sweetened condenced milk the first time. Using Eagle brand did make a difference and I let them cook an extra minute. I think next time I will make them more in advance and chill them so they cut cleaner.

Mojito Sorbet

I have trouble rating this one. I made it just like the directions but I felt it was a little too sour for my liking but I shared it with my mother-in-law and she loved it. It was very sweet and sour so much in fact that I could not taste the mint in it. I plan on making it again but I think I am going to cut the amount of lime juice and lime zest. By the way, to make this recipe according to instructions you will need 5 to 6 fresh limes.

Very Popular Bubble Tea

I have tried this recipe several times. I found I had to cook my tapioca for much longer. Cook it until the tapioca is clear. Also after the ice is added the tea is a bit watered down. I used less ice the second time to keep the tea a little stronger. The flavor was good but just not strong enough for my taste. I might try it again with chai tea. I am sure that would be very yummy.

These were very good. I took some of the advice and flipped the buns onto a cookie sheet when they were done baking so the buttery sugar and cinnamon mixture would coat them.
