Playgroup Granola Bars

This recipe was excellent, and although I only gave it 4 stars, it definitely is a 5-star with some of the changes I made based on other reviewers' ideas. I did use whole wheat flour, as one reviewer suggested, and I cut the brown sugar down to 1/2 C. Next time I will cut it down even more to 1/3 C or even 1/4 C. Also, I don't generally have wheat germ in the house, so I used the same amount of flaxseed meal instead. And last but not least, for additions I used raisins and semi-sweet chocolate chips, since my kids love chocochip granola bars. No nuts because we have allergies. These were wonderful and I will make them regularly!

Allison's Pasta Salad

This was good; I don't know if it was spectaular, but it was a nice change. I did increase the amount of dressing a bit, although not quite doubled. I also increased the amount of dill (because I love it!) and I used less vinegar, along with some lemon juice, which gave this a great fresh flavor. The combination of ham, grapes, cheese and green onions was a good one. All in all, a very good recipe and I will probably make it again sometime.

Banana Crunch Cake

I give this a top rating due to the others who have reviewed it before me. I used canola oil, as one reviewer said, and I did cut the topping down to 1/3 cup on all ingredients except the butter, and it was perfect!! This was so delicious and the oat flour (which is super simple to make) gave it such a yummy nutty flavor which I love, especially since my husband and son both have nut allergies and I can't use the real thing! Great recipe!

Pollo (Chicken) Fricassee from Puerto Rico

This recipe was very good, and my husband and I both loved it. It was a bit spicy for my kids, who are 3 and 5, but that could be because of my one major substitution. I used one chipotle pepper and about a teaspoon of adobo sauce instead of the adobo and sazon seasonings. The sauce was still delicious, though, in my opinion, and the chicken was just falling off the bone- so tender and yummy! I will definitely make this again!

My Favorite Pork Turkey Meatloaf

All I can say is "Yum!" I usually make my meatloaf using meatloaf mix (beef, pork, and veal) but it is soooooo greasy and I tend to be very health conscious, so this was a good alternative (the combination of turkey and pork is a good one), and it turned out tasting very much like my usual meatloaf. I made some changes (I hope you don't mind Kris) -I used a handful of parsley in place of spinach, I used an envelope of onion soup mix, I used just one whole egg and then one egg white to lighten it a bit, and I used oats as my filler rather than bread crumbs, par usual. I had to leave some things the way I normally do or my kids would not have eaten it! However many changes I made, the basic recipe is still a winner, and no matter how you dress it up to your own taste, this is one DELISH meatloaf, hubby and kid-approved! I also used the leftovers (as recommended by Kris) to make spaghetti sauce- I started with my usual homemade sauce, then crumbled the meat into it and let it simmer for an hour. It was great!

Oriental Style Ginger Dressing

Very good salad dressing, although it does require a bit of tweaking! The list of ingredients is perfect, but the measurements need a little changing. One tip- if you have a good seasons bottle follow the vinegar and oil lines on the bottle and add everything else in varying quantities according to your tastes and it will turn out well! Also, rice wine vinegar gives it a bit more authentic taste!

Annie's Fruit Salsa and Cinnamon Chips

Yum! This recipe is a keeper! Some of the other reviewers stated how they added other fruits, but I think Annie hit it right on with the combination of strawberries, raspberries, kiwi, and apples. I used strawberry preserves with this because it is what I had, but instead of the sugars I added about 2 tablespoons of honey and the juice of a lemon. The cinnamon chips turned out great! Delicious recipe, Annie!

Rachel's Tomato Basil Soup

Wow! This was so delicious! Even my husband, who normally can give or take tomato soup, said this was great and he liked that it was thicker than the average bowl of Campbell's- and much tastier too! I followed the recipe completely until the very end, and instead of an entire cup of cream, I only added half a cup, and I omitted the butter altogether. The creamy consistency was perfect. I also added a little bit of dried dill to add to the herb flavor, a teaspoon of bottled minced garlic, and some salt and pepper. The end result was VERY close to the Tomato-Dill Soup I love at one of our local restaurants. Great recipe Rachel!

Chocolate Cream Pudding

This pudding is delicious! My kids and I had this as a snack with some vanilla wafers and loved it! I made a couple of minor changes to the recipe though- I cut the vanilla extract down to 1 teaspoon and added 1 teaspoon of almond extract as well. I also omitted the butter at the end (simply because I got busy with my kids and forgot until it was already in the fridge) and even without it this was the richest, creamiest pudding I've ever made, and I saved on some calories and fat! I will definitely make this again!
