About this Cook
I am Mom to two wonderful kids ages 8 and 11 and wife to a great husband who, bless his heart, puts up with me! I am a preschool teacher of four-year olds during the school year and nature camp counselor during the summer! I am also an avid health nut! I make everything from scratch, nothing processed, and I Try to get to the gym as much as our busy schedules will allow!
My favorite things to cook
I love to cook and bake almost anything, but most of what I cook and create has a healthful spin on it- I love to do recipe revamps and make our old favorites healthier. In the summer I have a huge garden that gives us lots of goodies!
My favorite family cooking traditions
I loved cooking alongside my mom growing up (and still do actually!) and some of my favorite times in the kitchen are during the holidays when my mother and siblings and I (and our spouses) are all fighting for space in the kitchen together, cooking rich, delicious foods, and driving each other nuts at the same time :)!
My cooking triumphs
I always bake a great deal of cookies (about 15 varieties) during the holidays which I give as gifts to family and friends each year. In the past a number of our friends and family, as well as my husband's co-workers, have asked whether or not I sell them or have thought about it. So the last couple of years I have and have been very successful!!!
My cooking tragedies
I can't make a nice-looking cupcake to save my life! Cakes just never rise the was I want them to, which is odd, because my muffins always come out awesome, and I rarely ever use a recipe for any muffin!

Chicken and Red Wine Sauce
This was good, but not as good as I was hoping. I did take other reviewers' advice and I cut back the sugar and the wine a bit. The sauce was very yummy and my family loved it- especially my kids. It tastes a little bit like a teriyaki sauce because of the brown sugar. I don't know that the cooking method and time was quite right. I questioned it initially because it seemed long for chicken breasts, but then decided to follow the recipe and so I ended up with fairly dry chicken. If I do this again I will give the chicken a quick sear, then make the sauce and add the chicken back to the pan for a couple minutes.

Three Bean Salad
Very good- also got the kid seal of approval from my 5 and 8 year-olds! I used fresh beans from my garden, both green and yellow, so I blanched them for a few minutes in boiling water. I also threw the sliced onion in for about the last 30 seconds, just to soften them a bit, then I plunged all the veggies into an ice bath. I used celery salt rather than seed, and that was only because I discovered I was out of celery seed, and I also cut back on the sugar some (probably to about 1/2 cup). This was very good- my whole family enjoyed it.

Banana Crumb Muffins
De-lish recipe! I healthied things up by subbing some whole wheat flour, and by using oil in place of the butter in the batter, and added 1 t. vanilla. Yummy muffins!
