Authentic Louisiana Red Beans and Rice

This dish was a hit. I used frozen kidney beans and omitted thyme, only because I didn't have any. I also turned the spice factor down a notch because I wanted to serve it to my toddlers. Even without the thyme and full fire, my husband and I thought it was a hit. Now I must admit that I thought the base recipe was in need of salt so I added a little tub of that concentrated chicken stock and it complimented the dish perfectly. This dish is a winner! I will certainly make this again, with the modifications I made. I whipped up some corn bread, fried chicken and rice. I can hardly wait to eat it again tomorrow!

Tuna Noodle Casserole from Scratch

I listened to other reviewers and used crackers in lieu of bread crumbs and store cheese into the milk mixture just because it appealed to me. I used unsweetened coconut milk instead of cow's to and this recipe was the bombsies! For those who prefer measurements: 1 tsp seasoned salt; 1/4 tsp pepper worked perfectly for me. I also used 3 cans of albacore tuna (5oz) because it called for 12 oz and I actually meant to split one can in half and forgot. Despite that I didn't find it to be dry at all! I did use a 2.5qt glass casserole dish though. I will undoubtedly make again. My finicky toddler even ate it. I had to remove the peas and obvious tuna chunks from his plate, but he smashed it!

After-Christmas Turkey Potpie

Fabulous go-to recipe! It's easy to make, and is a perfect way to use up any leftover bird. I use a bag of frozen peas and carrots instead of green beans and carrots, but I follow the rest pretty closely. I'm not a big thyme fan so I cut that in half - personal preference though. I'll be making this tonight and I can't wait. Frozen pot pies are a thing of the past - you can't be satisfied with them after this. Oh! I agree with another post that indicated that they use deep dish pie crusts and still have an abundance of filling - am I doing something wrong? My pie always has a heaping mound :)

French Toast I

Wonderful! I too use butter in lieu of oil. I would also suggest a loaf of egg bread for your bread selection. I slice them about 3/4" thick and it turns out fabulous. FYI: The egg bread doesn't get soggy in the center. I drop my bread one side down in the mixture and immediately flip it and then transfer it to the pan of melted butter - medium heat. Yum!

Boilermaker Tailgate Chili

This is a winner! I didn't use beer because I didn't have any on hand, but I was more than satisfied with the flavor and heartiness of this recipe. I'm always complimented whenever I serve this dish. I brown the meat and toss everything in the crockpot. Thanks Mightypurdue22!

Carrot Cake III

I messed the recipe up (added 2cps pecans to batter) and it was still phenomenal! Prior to this I felt that nothing topped my Cheesecake Factory Experience, but this is definitely a recipe to take notice of. Yum!

Sirloin Tips and Mushrooms

My husband and I both loved the flavor. I did add 2 tbsp of brown sugar as one reviewer suggested, just to take the bite out of the wine/tomato sauce though. The meat was way over done but I'm not sure if it's because of the cut that I chose or the timing. I actually cooked it less than recommended because I was worried that it was over cooking. Is that the reason my tips were tough/dry? Is it that they're undercooked or does dryness seal the deal for it being overcooked? Does anyone know?

Chicken Stir-Fry

Great with Beef too! I only made substitutes because I had to and I was pleasantly surprised! I substituted the beef for the chicken and the ginger for the allspice and it was a hit. I also substituted the chix broth for beef broth for obvious reasons.

Cream of Asparagus Soup I

Exceptional Recipe! I read the comments and was going to adhere to the recipe despite what I read but then I too realized that the amount of boullion powder was just too much. I used one tablespoon and was very impressed with the flavor. I didn't make any other changes. My husband said this one was surely a keeper.

Yellow Squash Dressing

Phenomenal flavor and great way to incorporate squash into the daily diet. It was definitely too moist for my liking so I will definitely modify it next time as well as dice instead of chop the onions, but it is a great recipe all in all!

Jay's Jerk Chicken

The flavor was good, but Jerk it was not. It was not spicy at all, perhaps the suggestion to remove all the seeds from the halapeno should've been modified. I think this recipe would've recieved a better score from me if I found it in under BBQ Chicken marinade.
