Angel Chicken Pasta

I made an account just to rave about THIS recipe! It was wonderful - I did double the sauce, italian dressing included, and added some chopped tomatoes. The chicken turned out perfectly moist. Everyone LOVED it, including all 4 kids present (ages 7, 6, 4, 2). My husband said "this is the best thing you've made in a long time"!

Spiral Pasta Salad

This is really really good! I was looking for something different - not the traditional mayonnaise variety and not the "dump a bottle of dressing" kind. This dressing was easy to make. I made 1 lb. of pasta, doubled the dressing and did also throw in some parmesean (1/2 cup), 2 Tbsp of chopped fresh cilantro plus some pepper. SUCH a nice change from other recipes!

To Die For Blueberry Muffins

Best blueberry muffins I've ever made, bar none. I followed this recipe exactly, no substitutions or additions. I spread out the batter between 12 regular muffin tins and the topping fit them exactly. Thank you!!

Tuna Melts

LOVED this! I thought the amount of mayo was perfect with the 12 oz. tuna. My family all raved about these. I added a little bit of seasoning: about 1 tsp. garlic powder, 1/2 tsp. Mrs. Dash, and some pepper. I made these open-faced on hamburger buns and sprinked some of the cheese with a bit of parmesean on top. Yum yum yum!!

Turkey Bow Tie Skillet

Myself, hubby and 3 kids thought this was yummy! We followed recipe as is except for using regular diced tomatoes and adding more liquid to the noodles, and about a tbsp of Watkins chicken base to thicken it up a tad. Added in peas and frozen spinach - you could really add any veggies to this recipe and it would taste good.

Tilapia Scampi

We LOVED this. I kept the ingredients more or less as stated. I think I probably added in a lot more garlic because I used some jarred garlic I had, which is a lot less potent. I also added in some Parmesan cheese to the melted butter which made it even more yummy. Our fillets were much smaller than those in the recipe (2-3 oz maybe), so we cooked this in half the time. SO EASY!

Blueberry Crisp II

I've made a number of crisps in my lifetime, and this was the worst. I suppose it's an option for those who need to be dairy-free, but for the rest of you, use the Triple Berry Crisp recipe, it's the best. I followed this recipe exactly, other than adding a bit of flour and sugar to the berries. The top turned out granular, like sand. And because there wasn't much sugar mixed with the berries (if you follow the recipe, there is none), it didn't taste sweet enough. Mine was not runny because of the tbsp or 2 of flour I added with the berries. I had to cook this about 70 min. for the top to slightly brown.

Egg Salad Sandwiches

I thought this was delightful. As written, it has a little too much dill for my (and my family's) taste - so I did 1/2 tsp. Also used very finely chopped onions (2 Tbsp) instead of dried. The original recipe has too much mayo, so I did about 3/4 C. and then also added in 2 more eggs. Also added in 1 stalk very finely chopped celery. If you let this sit in the fridge for a few hours or overnight it is WONDERFUL. (add paprika too!) I love this on a piece of toasted bread, openfaced.
