Chicken Breasts Stuffed with Perfection

i was on a special diet when i made these so i didn't do the bread crust coating on them. i did season the outside of the chicken with thyme, pepper, a little oregano and a tad of parmesan and they where still awesome!

Slow Cooker Beef Stew III

Super Good! I didn't use the crock pot b/c it wasn't big enough for the crowd I had to feed. So I just browned the meat a little in some olive oil, then threw all the ingredients into two big pots on the stove. I brought it to a boil then backed the heat down and left it at a low simmer for a couple of hours. I did use extra on the veggies and beef broth in with the water. It was a big hit!

Potato Soup V

Big Hit! I made this exactly as the recipe says except with a tad extra onion and celery. I served it with toasted turkey, turkey bacon and cheddar subs. We all really enjoyed it. Thanks a lot!

Mexican Corn

This recipe went 50/50 at a recent get together. Half raved over it and half thought it was way too spicy! I guess I'm in the ladder half as I could have been happy with half the jalapenos suggested. My husband on the other hand could not get enough! Overall this is a very easy dish that could easily be modified based on how spicy you like it.

Spanish Rice I

All the ingredients together are really delicious. I just found the instructions on this one a bit vague. I think the rice should be cooked first and the onions should be sauteed by themselves for awhile before adding the peppers. In the end I just threw everything into a big pot, added some water and let it simmer like a thick soup until the onions were tender and not so strong. It tasted great in the end.
