Addictive Chocolate Truffles

i always wanted to try to make some truffles, now i know they are more trouble then they're worth. very rich & messy to make & a lot of work for not a lot of reward. can't make with kids around, too fast paced trying to get them back in the fridge all the time. i'll stick with cookies...

Quick and Easy Chicken Spaghetti

didn't like it much. we usually don't cook with 'cream of...soup', so i think it just tasted fake. also a little too spicy for my 2 year old with the rotel tomotoes. if i was making it again, i'd use regular diced. oh well, i like trying something new, now we know this wasn't a home run for our family.

Papa Drexler's Bavarian Pretzels

yum! these were pretty easy & fast for doing them the first time. there's a certain confidence you get once you make certain recipes several times, so i think they will get even better when we make them again, and again, etc. i was amazed how good they looked, i got my hands slapped cuz i kept trying to sneak one before we had our dinner. my hubby made a couple into hoagie rolls & we split them afterwards & stuffed em with sausage, mustard & saurkraut! delish! and he's taking a turkey samich on one today for lunch! will definitely make again! good little weekend recipe-something everyone in the family can help with too!

Breakfast Sausage Casserole

good, filling, the bread a nice change from the hash browns. turned out just like the picture. i even forgot to grease the pan & it was fine getting pieces out! oh, and browned up onions with the sausage like some of the suggestions stated-good idea. pretty good-will definitely need to make more of these type dishes, they're just too easy for a quick sat/sun morning breakfast.

German Apple Cake I

made this for dessert with an entire german themed meal. weisswurst, spaetzle, sauerkraute, and this for dessert. delish! i decided to make a cream cheese frosting for it because it was for a bday celebration & made it into 2 8" layers, & only iced the middle & top, leaving cake exposed on sides. looked homemade, which equals downhome & made with love. very moist, very apple-y, cinnamon-y & fall-y. cake was great on it's own, so with or without icing, it's super tasty! will make again, i don't even need a birthday or oktoberfest as an excuse!

Basil Chicken over Angel Hair

this is so simple, it's surprising how great it is! the only thing i changed was i added 2 cloves of garlic instead of only 1. i used the canned tomatoes & was pleased, but i can only imagine how good it'd be with fresh chopped tomatoes added in summertime! will definitely make again!

Boudreaux's Zydeco Stomp Gumbo

super pleased with how this turned out. i didn't follow it exactly, but close enough. looked up a cajun seasoning recipe & did my own instead, super easy. and used a frozen gumbo veggie mix with okra & corn in it. only used the rotel type tomato mix & no other tomatoes or peppers. was very pleased & will definitely make again.

liked the spices but felt it was a little dry, added more oil than listed. the taste was good, i added onions to the mix as well, as this is what i've had in restaurants before. will make again, for sure. my hubby really liked it.

Spinach and Feta Turkey Burgers

i liked these just fine. they are a nice change from the heavy burger. it feels lighter, healthier, but still you feel full cuz it's still meat. i paired it with the greek tortellini salad recipe from here (one of my favorites!) & you have a winner!

Spinach Lasagna III

i liked this a lot. will make again. i switched the mushrooms for roasted red peppers (2 jars cut up) & was fantastic. used real mozzarella & was very hearty, didn't miss meat at all!!!

Split Pea Soup with Rosemary

just made this for lazy sunday afternoon. it was great! the bacon is much better than the ham hock kind, which was overpowering. and the only changes i made was i used 1 potato instead of leeks, and added 2 extra slices of bacon cuz i was using up the end of a package. will definitely make this one again!

Creamy Italian Dressing II

made this for my book club tonite & it was a real hit. used it on the simple italian salad with artichokes, pimentos, red onions, & black olives with parm & asiago cheeses, & it was delish!!!! i actually made it up last night & i think it really helped to have that time to meld the flavors. excellent & so easy!

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

i really thought the blue cheese was a bit overpowering, and i used frozen spinach, which was a little mushy. i think i will make again & try it with fresh spinach & maybe less blue cheese & some cream cheese mixed in, like some of the other reviews. i'll write back then...

Gourmet Mushroom Risotto

it was just ok. i would be willing to give it another try though, since i was trying to make 3 brand new recipes all at the same time, so it got a bit hairy. and risotto is really a fussy thing i guess, so i don't know if i wasn't able to pay enough attention to it the entire time. i thought the rice was a bit too chewy, but overall i liked the flavor & i liked using the different mushrooms(button & portabellas) to give it some meatiness.

Award Winning Soft Chocolate Chip Cookies

i halfed the recipe, but the only changes i made was to increase the vanilla by twice as much and i used milk chocolate chips cuz i think it makes for a creamier cookie taste. this is a great cookie recipe that i will definitely continue to make.

French Onion Soup I

i agree that it's only a good starter for french onion soup. we ended up using only 1 cup of water & an extra can of broth(i used chicken cuz it's what i had) and i ended up cooking the onions(with a clove of garlic) for about 30 minutes or so on med-hi until they got a really good brown on them, and then had to use some herbs, parsley, thyme, S&P and a dash or 2 or worcstershire. hope this helps...
