Easy Pumpkin Muffins

SO yummy! my kids licked the bowl clean!!! they absolutely loved it, as did hubby and I! We added one egg for added moisture. And, did mini muffins, as I feel they taste better and made our own cream cheese icing piped on the top. Went over VERY well! :) Thanks!

These are really easy and super good. Just make sure you cream everything really well (cream cheese well softened) or it you will be able to see the chunks of cheese in it. icky.

Little Mickey's Favorite Cheesecake

Just like the picture, I didn't put the chocolate chips in the cheesecake, but made it into a ganache for the top. I also had a full cup of peanut butter as well as leaving the cinnamon out of the crust. I added a few peanut butter captain crunch (about a 1/2 cup) into the crust in addition to the graham crackers and omitted the peanuts. I used the Pampered Chef SpringForm pan and had no problem with butter leaking out, so that was good. I took this to Lenten dinner for church and there was not ONE piece left, and that was before the buffet line was done! :) Great recipe!

Freezer Frosting

GREAT for freezing! It really is. We celebrate 1/2 birthday's as well as birthdays in our family, so we're always making a cake and freezing "1/2" for the next "1/2" birthday. This year we tried a new thing to make the frosting and frost them WITH the cake and this frosting still held it's yummy flavor and color after being frozen!

Classic Macaroni and Cheese

It was good, and I really liked the no-eggs in it, as we have egg allergies, but we did find it to lack a bit in flavor. We have tried a bunch of different mac & cheeses, some are too try, some are too zingy (mustard)... this one was GOOD, it just needed a bit more cheesiness, I think. We added some American and Monterey Jack to the leftovers (which save very well, by the way! :) ) and it was even better than the first time around!

Baked Ziti III

This was very tasty! I had numerous compliments when I served this for our son's first birthday party. It was easily prepared the night before and popped in the oven before the party. The flavors had a chance to mingle a bit and it was very good.

Chicken Supreme III

My husband and daughter are extremely fussy eaters, and this was a hit! My friend made it for us when we had our 2nd baby, and it was so good, we had to get the recipe. She got it from here, and we loved it. We literatelly eat it just about every other week! I just leave out the onion since my husband and daugter don't like onion, and they absolutely devour this dish!
