These are really good as written! The only thing I changed was to use a whole package of taco seasoning and some fresh cilantro. Awesome for a nice meal that looks like you spent lots of time on!!

Crab Brunch Casserole

Reviewed: Mar. 11, 2013
This is a good base recipe but I added 1 extra egg, 1/4 cup white wine, used light half & half instead of milk, and used 2 lbs total of seafood (crab, lobster meat, and small shrimp). I also added old bay seasoning and used 1/4 cup chopped onion instead of minced, 1/2 cup chopped celery, and 1/2 cup of parmesean cheese. Served with a salad and white wine, fabulous!

Slow Cooker Chicken Taco Soup

Reviewed: Jan. 23, 2013
This recipe is incredible, I altered it to cook on top of the stove due to time constraints but the stew like consistency and the hearty addition of beans makes it a meal in of itself. i used skinless boneless thighs instead of breasts and added diced red peppers. Served with cheese quesadillas on the side, awesome!

Easy Mexican Casserole

Reviewed: Apr. 11, 2012
The family loved this. I did add a package of taco seasoning to the beef and used canned Rotel tomatoes with chili peppers instead of diced tomatoes on top. They asked to put this one on the regular rotation.

Mimi's Slumgullion

Reviewed: Feb. 27, 2009
I made it for my husband and did not try it as I do not like potatoes or kielbasa, followe all direction yet my my husband found it bland. I added minced garlic to the onions as they sauteed and added thyme, rosemary, and basil but he still found it tastleless...sorry. He is not a fussy man so I assume it needs more.

Spinach Stuffed Chicken Breast

Reviewed: Oct. 28, 2008
After reading other reviews regarding this recipe being a little bland I made some revisions that made all the difference. I sauteed the spinach in a little olive oil and 1/2 tablespoon of minced garlic. I also used asiago, parmesean, and mozzarella cheeses instead of the cheddar jack cheese. I burshed the chicken with bottled Italian salad dressing prior to stuffing and rolling (a little messy) this adds flavor and keeps the chicken moist. Many have suggested using buttermilk for this purpose however buttermilk does not add anything to the flavor of the chicken. I also substituted by wrapping 2 slices prosciutto instead of wrapping in bacon. This made a wonderful gourmet main dish that I would serve to company. My family loved it and and will make this again with these revisions. Nice base recipe.

This is a great base recipe but a little bland so I sauteed chicken in olive oil with minced garlic, added 1 teaspoon basil, 1/2 cup white wine, and fresh mushrooms, coarse black pepper and sea salt. The family loved it and asked for it to be put in the regular meal rotation.

These were really good. I followed the recipe as is but prefer to cook my beans in a crock pot. Great taste and extra fiber to boot. Great barbecue side dish.

This was excellent, I didn't change anything other than to double the marsala sauce and allow to thicken. Served with a simple pasta tossed with olive oil, garlic, and basil. Great recipe!!!
