Chicken Flautas

These were really good, I baked the chicken with salsa spread on top, as another reviewer had recommended, YUM! Oh and added extra cheese on top. My 1yr old and 3yr old also loved them. Thanks!

Bacon Roll Ups II

I made these for a party a couple weeks ago, they were gone in less than 10mins, my husband and his friends really enjoyed them. What I did differently was took a loaf of french bread split it in the middle horizontally and spread the cream cheese mixture(I mixed the cream cheese with a 1/2 packet of ranch seasoning) on both halves and added some shredded cheddar cheese to that mixture, cut the loaf into smaller pieces and wrapped them each in a half a piece of bacon, used the same cooking time and temp. Really yummy and different. :) Thanks

Potato Casserole

I love this recipe! I cut the butter and sour cream in half, use french fried onions on top, use the family size cream of chicken soup, sometimes use half pepper jack and half cheddar, add small ham cubes, and 3/4C low-fat cottage cheese, 1 tsp garlic powder, 1/2tsp onion powder and salt, fresh ground black pepper to taste. YUMMY!

Two Step Creamy Cheesecake

Yummy and soooo easy, I halved the whipped cream, used fat free cream cheese and topped with chocolate chips and crushed vanilla waffers. Perfect when you don't have time to bake a real one.

Best Ever Jalapeno Poppers

Amazing! Yummo, remember to wear gloves when handling jalapenos, and I ran out of bread crumbs halfway through so I used cornmeal and they turned out just as good. Thanks!!!

Country Style Green Beans with Red Potatoes

YUMMY! The only thing I changed was I used bacon ends and pieces to flavor the stock, then cut the pieces up and put them back in with the green beans and potatoes at the end OH AND I used fresh green beans instead of canned so I had to adjust the time. AWESOME!

Whit's Chicken Enchiladas

This is a very good starter recipe for chicken enchiladas. I pretty much stayed with the recipe except: I boiled the chicken in chicken stock with 1/2 packet of taco seasoning, used a mixture of Monterey Jack and Pepper Jack cheese, Chopped up about 1/2 -3/4 of a medium onion which I Sauteed with the jalapeno and and green chillies. And instead of wrapping each enchilada individually with a tortilla, I sprayed the pan and layered the bottom and top with tortillas.I bet a can of mushrooms and/or sliced black olives would be a good addition. YUMMY! And not very hard to make.

Soft Chocolate Chip Cookies II

Yummy, I used all butter instead of butter and shortening just because I didn't have enough shortening. The first batch I cooked crispy on accident, but the second came out nice and soft. I also added walnuts.

Game Day Hamburgers

These were yummy, I used the suggested shredded hash browns inside instead of the potato, just make sure they are thawed first and add a bit of salt and pepper to the hash brown mix. I also added chopped fresh onions into the filling.

Beer Dip I

I made this to try and tide the family over until Thanksgiving dinner, they all loved it but sadly I never got the chance to try it. The bowl was empty before dinner, next time I will make more. I did add about 1/2cup of sour cream because it was a lil thick, other than that I stuck to the recipe.

French Egg and Bacon Sandwich

It was good, I had to use 4 eggs to make the french toast and I also added about a tsp of vanilla and 1/2 tsp of cinnamon to the egg mix for the french toast. I also used sugar free syrup on mine and my husband used regular, both were yummy.

Restaurant-Style Hashbrown Casserole

It definitely does not need the butter, the cheese makes it oily enough and the butter just sat on top and made it greasy. Probably would have been good if I would've left out the butter or at least cut in down to 1/3 of what it called for. I make it regularly now without the butter, and use low fat or fat free sour cream, YUMMO!

Gaye's Microwave Fudge

This was soooo easy and YUMMY! I used a pie pan and lined it with foil that I sprayed with cooking spray. It sets up really fast so you have to stir it fast to get the lumps out. I will make again.

Penne Pasta with Spinach and Bacon

My husband loved this! But I on the other hand thought it was kind of bland, even with my tweeking of adding garlic powder, crushed black peppercorn and salt. Maybe next time I will add black olives...I am not sure.
