Fluffy Pancakes

Country Apple Dumplings

WOW!!! These are amazing! So simple and delicious. Will definitely make again....over and over. The only thing I would change next time is to possibly cut the apples into quarters instead of eighths. My apples were on the medium side and we would have liked a bit more on the inside of the dumpling. Thank you so much for the great recipe!

Capers and Halibut

Delicious! I used rockfish instead of halibut, and added some sliced green onions just before returning the fish to the pan. Even the kids were requesting seconds! This will definitely become a frequently used recipe in our house. :) Thank you for sharing.

Sweet and Sour Sauce I

Wonderful! I only made minor changes to the recipe as suggested by previous reviews --- I used 1/2 cup white sugar plus 1/4 cup brown sugar, increased the ketchup to 1/4 cup, and decreased the soy sauce to 2 Tbs. I mixed all ingredients together and then poured over stir-fried chicken/carrots/onion/green pepper, and simmered for about 5 minutes, then added fresh cubed pineapple. Delicious!

Best Egg Rolls

EASY! And very tasty! This was the first time I have ever made home-made egg rolls. What a treat! I added fresh garlic to the meat instead of the garlic powder, and used canola oil instead of peanut oil. Also, I added a bit of black pepper to the mix before filling the wrappers. I got 16 egg rolls out of this recipe using 1/3 cup filling per egg roll. Even my 9 and 5 year old kids asked for seconds!! A definite keeper recipe. Thanks so much for sharing. :)

Strawberry Cake IV

AWESOME!!! I made this for a get-together with friends and everyone loved it. I did change a few things..... I didn't have white cake mix, so used strawberry with cherry jello. It was wonderful! As others stated about the frosting, the milk was not needed, nor do you need to melt the margarine. I used the 4 Tbs margarine, 4 cups confectioners sugar, and the strawberries, then added a half tub of Cool Whip. Thank you so much for sharing!

Kentucky Biscuits

These biscuits are AWESOME!! I have never been a fan of biscuits, but these are really good. I had to use a buttermilk substitute (1 TBS lemon juice in a 1-cup measuring cup and add milk to make 1 cup) as we had no buttermilk. They turned out wonderful! I do think next time, though, I will add a little salt as suggested by other reviewers. And, I will probably try cheese or other seasonings on them as well. Can't wait!

Baked Spinach

One Word.....AWESOME! I followed the advice of others and mixed the eggs, flour, and milk, and then poured over the spinach. I also used fresh-grated parmesan cheese with panko bread crumbs for the topping, drizzled with melted butter. It only took 35 min to bake. Fabulous!
