Nacho Cheese Sauce

Reviewed: Jan. 19, 2009
This was awesome! I used half american and half cheddar cheese and it was delicious. I also added salsa while it was cooking, and we used it in nachos, with refried beans and taco meat and sour cream, all over tortilla chips. I had to add a little more milk before I served it because it had cooked to be so thick. I think next time I just won't heat it for quite as long. Thanks for the recipe! It sure beats Velveeta!

Taco Seasoning I

Reviewed: Jan. 19, 2009
Wonderful! I follow the recipe almost exactly (I just use regular salt because I don't keep sea salt on hand), and I use this ALL the time! Thanks :)

No Ordinary Meatloaf

Reviewed: Feb. 14, 2010
This was really tasty and smelled delicious! I baked it in silicone muffin cups instead of a loaf pan, and used ground pork, no beef, and used fresh tomatoes. I cut the recipe in half and it made 12 "muffins." Wonderful served with mashed potatoes!

Caesar Salad Supreme

This was great! I only had plain mustard so that's what I used. I also added diced grilled chicken. Yummy!

Baked Ziti Supreme

Reviewed: Mar. 6, 2010
Yum! I love this recipe compared to others for a few reasons. Usually baked ziti recipes call for layering pasta, meat, cheese. This one has you just mix it all up and then top with cheese, which is so much better, because all the pasta gets covered in sauce, plus it is easier! Also, the onions really added something. I used a spaghetti sauce seasoning packet, mixed with tomato paste and water instead of a jar, and I also used some cheddar cheese on top, along with the mozzarella, because I had it on hand. So delicious served with garlic toast and a veggie.

Baked Potato Soup

Reviewed: Mar. 6, 2010
I could eat this every day! I don't usually drain any of the bacon grease, I just add it all to the soup. I also at least double the potatoes to get a thicker soup and more servings. I never have half and half cream, so I just use milk with butter. Otherwise just follow the recipe. Note: I had leftover white gravy from a biscuits and gravy breakfast one day, so I threw it in the soup in place of most of the milk, and it was awesome!

Chicken and Corn Chili

Reviewed: Apr. 1, 2010
This is so yummy! I add about 4 cups of chicken broth. It's great in the crockpot, or you can boil the chicken in the chicken broth and then chop it, and add the chopped chicken back to the broth with all the other ingredients and simmer until flavors are blended and everything is hot. Great with or without cheese.

Four Cheese Margherita Pizza

Reviewed: Jun. 29, 2010
I made several changes to the recipe only because I didn't have all the ingredients, or access to them because I live overseas. I used plain salt, not sea salt, regular tomatoes, dried basil, and mozzarella, white cheddar and parmesan cheese. I loved the idea to marinate the tomatoes, I think that really helped the flavor! I probably actually marinated them for an hour. I followed the instructions pretty closely, using the mozzarella first, then the tomatoes, then cheddar, basil and parmesan on top. I forgot to pre-bake the pizza crust, so it got a little soggy in the middle but it was ok. Another review mentioned making sure the juice was all drained out of the tomato slices, which helped it not be too soggy. I'm sure the pizza would be absolutely delicious just as the recipe was written, I just couldn't get all those cheeses. The variation I made was wonderful and I will be making it again!

Cheddar Rice Casserole

Reviewed: Jan. 10, 2014
We eat this often- even our young children like it! I change a few things. I add about a cup of diced, cooked chicken to make it a main dish. I often use mozzarella cheese in place of the cheddar. And I use a tablespoon of dried italian seasoning in place of the parsley. Yum!
