Four Cheese Margherita Pizza
I made several changes to the recipe only because I didn't have all the ingredients, or access to them because I live overseas. I used plain salt, not sea salt, regular tomatoes, dried basil, and mozzarella, white cheddar and parmesan cheese. I loved the idea to marinate the tomatoes, I think that really helped the flavor! I probably actually marinated them for an hour. I followed the instructions pretty closely, using the mozzarella first, then the tomatoes, then cheddar, basil and parmesan on top. I forgot to pre-bake the pizza crust, so it got a little soggy in the middle but it was ok. Another review mentioned making sure the juice was all drained out of the tomato slices, which helped it not be too soggy. I'm sure the pizza would be absolutely delicious just as the recipe was written, I just couldn't get all those cheeses. The variation I made was wonderful and I will be making it again!

Chicken and Corn Chili
This is so yummy! I add about 4 cups of chicken broth. It's great in the crockpot, or you can boil the chicken in the chicken broth and then chop it, and add the chopped chicken back to the broth with all the other ingredients and simmer until flavors are blended and everything is hot. Great with or without cheese.

Baked Ziti Supreme
Yum! I love this recipe compared to others for a few reasons. Usually baked ziti recipes call for layering pasta, meat, cheese. This one has you just mix it all up and then top with cheese, which is so much better, because all the pasta gets covered in sauce, plus it is easier! Also, the onions really added something. I used a spaghetti sauce seasoning packet, mixed with tomato paste and water instead of a jar, and I also used some cheddar cheese on top, along with the mozzarella, because I had it on hand. So delicious served with garlic toast and a veggie.
