Anu's Bhapa Doi

Very easy and tasty. I made it for Valentine's Day so I added an Oreo crumb crust and drizzled caramel sauce and chocolate sprinkles on top and I used pecans instead of almonds. Next time I will make the plainer version using lowfat yogurt and see how that goes. To confert to metric, for a 300ml can of sweetened condensed milk I used 775ml of yogurt and it worked great. Firms up real nice. Definitely a keeper. Thank you.

Mushroom-Smothered Beef Burgers

A very nice and easy patty. I simmered it for an extra 10 minutes and served it over whole wheat pasta. I will definitely be adding it to my recipe box. Thanks for the recipe.

Ancho Honey Mustard Sauce

I gave this 4 stars only because I had to alter it. I used only half the amount of chili powder and garlic powder and only had white vinegar. But my husband and I both agree that it is still very very yummy and so easy to make. Two thumbs up!

Sweet and Sour Meatballs IV

This was tasty but I did change it a bit. I didn't have pineapple on hand so I used cranberry sauce instead. I also used onion powder instead of onions in the meatballs. It thickened nicely with the cornstarch mixed with 1/4 cup cold water. I recommend that you don't use whole cranberry sauce but the jellied type. I enjoyed it and will do it again but probably with the pineapple!

Dad's Leftover Turkey Pot Pie

I made a "few" changes to use up more of our Christmas dinner leftovers. I cooked the veggies in veggie broth instead of water drained a bit of it into my mashed potatoes and the rest I used instead of the chicken broth. I stirred in my leftover gravy into the sautéd onions instead of using flour as my gravy was quite thick. As another reviewer suggested, I replaced the pie-crust with mashed potatoes. It was actually quite pretty with the ribbons of white potatoes and sweet potatoes on the top. I sprinkled paprika on top for the finishing touch. Baked it uncovered for 40 minutes at 350°. A great way to use up all the leftovers. So delicious!

Spinach Sole Roll-Ups

This recipe didn't get the raves from the family I thought it might. The only substitution I did was replace the stewed tomatoes with tomato sauce(my daughter doesn't care for tomatoes). It looked very pretty and held together nicely but the flavor of the spinach was too strong for the mild sole flavor. I could try a different brand of spinach and see how it rates then.

Blueberry Nut Oat Bran Muffins

Tasty but a little dry for my hubby. I substituted 2/3 of the whiete flour with whole wheat so that could account for the dryness. I didn't have quite enough oat-bran so I topped it off with ground flax. Doubled the cinnamon and used 2 whole eggs. I do like the flavor and will make them again.

Sunshine Chicken

This is a very nice sauce for chicken. I used chicken breasts as well as adding sliced peppers and carrots. I baked it for 30 minutes then finished it under the broiler for about another 5 minutes. Served with rice it makes a very lovely meal. Hubby Approved Recipe!

Bobbie's Oatmeal Cookies

I made this recipe two ways: regular and gluten free. I substituted craisins and coconut for the raisins and cut the sugar a bit. The gluten-free ones were a hit with everyone; chewy and flattened just the right amount. The regular ones did not spread and were too crunchy. I must have overbaked them I guess. I will try them again and pull them out of the oven even if they look undercooked. A good base for cookies. Thanks.
