Mexican Pizza I

Delicious! I used Azteca taco salad shells and just cut them in half, laid them flat, and baked as directed for my top and bottom. A lot less work and DELICIOUS! Will definitely make again.

Swiss Chicken Casserole II

With a few changes, I might make it again. First, I cut the chicken into bite sized pieces. Next, you need about 2 times the amount of sauce it calls for. I followed other suggestions and substituted 1/2 the milk with sherry. If you double the sauce, only put it about 1/4 cup sherry total or it's a little overwhelming. Use milk for the rest as called for. I also doubled the stuffing mixture which I thought was the best part, so I didn't want to skimp on that! Pretty good after the changes. Hubby loved it. (Note to myself, use 4-6 pieces of chicken cut up into bite sized pieces.)

The cooking time is definitely too long, but even if it were reduced, this is just an "okay" recipe...not a bad meal by any means, but not necessarily one I'd add to my rotation either.

Spicy Sausage and Rice Casserole

Delicious! I did make the following changes...First, I used medium sausage and used the cayenne to adjust te spiciness to the level we like. Second, I threw the onions and peppers in with the sausage up front so they would cook and get tender while the sausage was browning. Then I threw the rice in with the tomatoes and the rest of the ingredients. Also, I took the advice of several reviews and cooked the mixture on the stovetop for about 15 minutes covered, then baked it at 350 for 10 minutes, then I added a layer of shredded cheese and baked for another 10. It reminds me of the stuffed green peppers I make, but in a casserole form. Delicious! Will definitely make it again!

Carne Asada Tacos

These were very good! I took advice from one of the reviews on here and used a jar of Salsa Verde instead of fresh tomatillos and it was GREAT and saved tons of time I think. Will definitely make these again! (Note to myself...use flour tortillas, not corn.)

Best Ever Layered Taco Dip

Recipe creator here! Just wanted to make a couple of notes...On Step 3, I don't use a mixer, just mix together with a spoon (not sure why they put that in there). Also, make sure you use fresh tomatoes, not canned! People are always asking for this recipe!

Chili Rellenos Casserole

This just wasn't for us. I like chili rellenos, but this just didn't work. I can't really put my finger on what was wrong with it. If I ever did make it again, I'd either use the green enchilada sauce or just tomato sauce instead of the red enchilada sauce, which is what I used based on a couple of reviews I read. I followed the recipe otherwise (oh, except I added some shredded chicken, too). We didn't hate it by any means, just didn't go back for seconds and probably won't make it again.

Really Creamy Fettuccine Alfredo

This was very good and very creamy, as the title states, but I think I'll make it with about 1/2 as much cream cheese...the cream cheese does add a great texture and makes it creamy for sure, but it just really overpowered the parmesan and took away from the traditional alfredo sauce flavor. I'll do another review after I try it with 1/2 the cream cheese and let you know if it's better that way!

Saltine Toffee Cookies

I think it was my fault, not the recipe's, but I just couldn't seem to get these to come out right. The toffee never got really hard and was just chewy...when I took a bite, the stuff wouldn't ever really chew up or go away, just kind of stuck to my teeth forever. Is this normal? Anyone want to tell me what I did wrong? Would love to try them if I could figure out how to do it correctly! It can't be the recipe's fault when it's had so many great reviews!

Shepherd's Pie I

This was pretty good, but not quite out of this world delicious. Leftovers were definitely better than the first night. I did add a can of corn under the potato layer, added a dollop of sour cream to the mashed potatoes, and added about a tablespoon of worcestire sauce to the meat mixture, all suggestions I took from many other reviews and I think they were all good additions. I will likely make this again, but I will probably try a different Shepherd's Pie recipe just for comparison next time.

Janine's Best Banana Bread

My husband and son LOVED this! I'm not much on banana bread (or anything like it), but I could even tell that it was good. My hubby loved it so much that he didn't believe me when I told him this was my first time ever making banana bread. Will definitely keep this recipe to use up bananas that don't otherwise get eaten! I used 3 very, very, ripe bananas and an extra 1/2 of a very ripe one that my son didn't finish, and otherwise followed the recipe exactly and it was PERFECT!

French Onion Soup Gratinee

This was absolutely the BEST french onion soup I have EVER had. It is DELICIOUS! It's got a very deep, rich flavor. The only change I made was that I used croutons instead of bread on top, and topped with shredded asiago. It was PERFECT! Thank you so much for such a tasty recipe that will stay in my family forever now!

Slow Cooker Italian Beef for Sandwiches

AMAZING! I used beef broth instead of water as other reviewers had suggested and as I typically do when I make a roast. At the end, I grilled/sauteed some onions and green peppers in a skillet in a little olive oil, then shredded the beef and mixed it all together (with some onion and garlic salt and some pepper), then served on deli rolls with pepperjack cheese. DELICIOUS!

Chuck's Favorite Mac and Cheese

This was delicious! I added some chopped up ham and served it as a main course and it was GREAT. Our guests asked for the recipe! I will say that I will add about 3/4 cup of extra milk or cream next time...the leftovers this time were pretty dry, so it will help with that, plus I just like a creamier mac and cheese.

Chicken Florentine Casserole

I thought this was good, but left out the mushrooms because I just don't like them. Next time, I will definitely use less spinach (half or even less). It was just overpowering with the amount called for. With that adjustment, it will be phenomenal!
