Oven-Roasted Asparagus

Pineapple Banana Bread

Always looking for a good recipe for those left over bananas and these are great! Lots of fruit & very moist!! Personally preferred alterations: 1 cup whole wheat flour & 2 cups all-purpose flour, 1 cup brown sugar & 1 cup white sugar, 1 cup oil & 1/4 cup applesauce. I make muffins as they're easier for the kids to grab:-)1 batch yields 12 regular muffins plus 24 mini-muffins; 325 degrees (convection) for 15 minutes. I also add some coconut flakes (when I have them) on top of some of the muffins before baking for my daughter; she really likes them that way! Thanks for the great recipe!!!

Peanut Butter and Banana French Toast

Made this for my husband & 2 kids ~ they LOVED it! (i personally don't care for cooked bananas) I did make more of a french toast by adding: cinnamon, nutmeg, and a bit of soy milk to the egg & vanilla. I didn't measure the butter, just used what was needed to coat the surface of electric skillet. Thanks for the recipe, they all want to have it again tomorrow morning!!!

Tofu Parmigiana

Wonderful recipe ~ kids & husband devour it every time! For the shear ease of already being seasoned, I use Italian bread crumbs and our favorite tomato sauce. I also bake the slices rather than frying; 350degrees, 15 min. on each side. I must highly recommend freezing the tofu slices; it really does make a difference. Freeze overnight if able, but 30 min. works too.

Delightful Apple Spice Muffins

Tried these out for my kids' school snack and they were great! Whole family loved the flavor! After reading the reviews & checking what was in my kitchen I made these changes: used 1/4 cup unsalted butter ~ substituted 2/3 cup brown sugar for white sugar ~ substituted 1/2 tsp. nutmeg for the allspice (didn't have any). For the batter: 1) mixed butter, brown sugar, eggs, and applesauce ~ 2) separately sifted together dry ingredients ~ 3) pour wet mix into dry mix and stirred just until blended. Recipe made 24 mini muffins. Next time I will: use 1 cup all-purpose flour & ½ cup whole wheat flour ~ use either chunky applesauce or add chopped apple pieces.

Lemon Square Bars

Wonderful Recipe - I made these for a cookout & they beat out all the brownies, cookies, cakes! I followed another reviewer's suggestion & lined my dish with parchment paper. This made it super easy & quick to lift out of the dish, cut, and put on a serving tray.

Ribboned Fudge Cake

I made this for a cookout and drizzled it with "Satiny Chocolate Glaze". The only touble I had was getting the middle cooked throughly, and about an hour after turning it out onto a plate a couple side pieces started to break away (that when I added the chocolate glaze to cover it up).

Warm Apple Buttermilk Custard Pie

Excellent Recipe! This was the first pie I ever made, I followed it exactly, and it came out wonderfully. I took this to a cookout & there were 3 other pies -- this was the only one with nothing but crumbs left!

Red, White, and Blueberry Cheesecake Pie

This cheesecake was WONDERFUL! I made it for 4th of July and ended up having to make another the following day by request. This was my first time using phyllo dough & it was well worth it; everyone commented on its wonderful taste & uniqueness. *The only thing I changed was making a flag design rather than the blueberry star. To make the flag I used blueberry preserves, strawberry preserves, and piped the stars & stripes out of cool whip.

American Potato Salad

Great classic/base recipe. I was in charge of potato salad and that's when I learned there were sooo many different ways to make it! I made this recipe exactly and it was good, but my husband and I like a bit more flavor so we added lots of pepper and some other ingredients: 1 diced pickle, some fresh dill, and about 1 Tbl. hot sauce (surprisingly the hot sauce really worked); we also left out some yolks, using mostly egg whites. This is a great recipe to either take as is or add you own personal tastes to at the end. I've already been asked to make it again!

To Die For Blueberry Muffins

Wonderful Recipe! The first time I made them I cut the topping ingredients in half and my family loved them, so I keep making them that way. I've also made them with organic sugar (which was the best!) and Splenda for my mother (she said they were the best she's had).

Peanut Butter Cup Cookies

Wonderful recipe! I did follow another's review and I put them directly into the freezer after inserting the candies. Just 10-15 minutes in the freezer and the candies were solid enough to pop out of the mini-muffin pan and complete cooling on a rack.
