Creamy Shrimp Stuffed Cherry Tomatoes

Fabulous & easy! I took other's advice and added some Old Bay. It was PHENOMENAL... the tomatoes weren't hard at all (I prepped everything the night before & assembled the next day) and my extra went GREAT on ritz crackers! I'll probably forego the tomatoes next time & just do the crackers w/ dip. It was GREAT! I put all the dip into a large ziploc bag to sit in the fridge overnight. The next day, I arranged my tomatoes, snipped the corner off the bag & piped as normal. Easy clean up! ;) Thanks, Delta Queen!

Strawberry Meringue Cake

This cake was awesome! I made it (see pic) for my daughter's 3rd birthday... instant hit! The only thing - the meringue expanded beyond the edges of the cake pan & looked horrible when trimmed - so, I got this 'rustic' looking cake. Also - the meringue fell after cooling...not sure if that was me or the recipe. I think this cake would be WONDERFUL without the meringue, as well. (Just increase the amount of whipping cream you use if you want to keep some of the 'height') The citrus in the cake mix was wonderful, but not overpowering. The cake still had a great texture & didn't crumble at all. I would definitely make this again!!

Chicken Wild Rice Soup II

This recipe was a HUGE HIT for an 'all soup' luncheon that we had... I couldn't find regular wild rice at the store, so I bought two boxes of Rice A Roni LG/WR and only used one of the season packets when I soaked it overnight. I re-boiled as instructed. I also added a can of chicken broth and about 3/4 of a cup more milk to increase the overall amount. Almonds MAKE this dish (great texture!) so be sure to include it. Also - we have leftover chicken from a birthday party the night before...so I cubed up 3 BBQ'd chicken tenderloins AND (ready?) about 12 chicken nuggets!! LOL - it was awesome! By the time the whole thing cooked (and then was transferred to a crock pot for another 2-3 hours), the breading was cooked off of the nuggets and no one knew the difference! Awesome recipe - thank you for posting!

Lazy Daisy Cake

This is a wonderful blast from the past - a family favorite! We poke holes in the cake prior to broiling to allow some of the gooey goodness to seep in even deeper!! Excellent recipe!

Peanut Butter Cake II

Everything was great! I had to bake the cakes for about 10 minutes longer to make sure they were done in the center, but everyone LOVED it. The frosting is flavorful, but not rich. And - it makes about twice the amount that you really need... so you could definitely save it & re-use on another batch of (chocolate?) cupcakes, etc. Also - if you have a pb&j lover, spread a layer of their favorite jam or jelly in the middle of the cake & then cover with the pb icing. Perfect!! As the pictures show, I also decorated with drizzled chocolate (semisweet chips melted in a ziploc bag & then snipped the end off to decorate) and some chopped mini pb cups. It was a HUGE hit! Also - if you make cupcakes from this, drop a mini peanut butter cup into the center of the batter (make sure it's covered with batter) before baking... you'll have pb surprise cupcakes. EXCELLENT!

Buffalo Chicken Dip

This was AWESOME...the only thing I would do is make it in a 9x13 pan... we served with tortilla chips while hot (and I used celery when it was cold the next day!!) If making it as a cold dip, I would layer as instructed, but just not melt the cheese. Or, mix the cheese in with it. YUM!! Excellent recipe!

Sausage Egg Muffins

These were awesome! I ran out of cooking spray & used margarine instead...NOT a good idea! Also - I loaded my muffin tins with the sausage, green chiles, scallions & cheese and then ladled the egg mixture over that. It helped to make them more uniform. Everyone LOVED these and they could be modified a hundred different ways depending on your tastes...(sausage vs. bacon vs. ham) These were a hit!

Country Apple Dumplings

Made 1 1/2 recipes of this in a larger dish & it was GREAT. I added 1 Tbl of cinnamon to it - everything else was the same. AWESOME. Also - if you have the time, I think the 'sauce' stands up better if they're baked the night before, put in the fridge & then reheated (300 degrees for 30 minutes or so) the next morning. The sauce has time to soak up into the dumplings & it's HEAVEN. Also - I poured the Mtn Dew in FIRST and then put the cinnamon mixture over it. That left as much ooey gooey topping up there as possible - YUM.

Amazing Pork Tenderloin in the Slow Cooker

This was GREAT...and super easy! It even reheated later for leftovers & was just as good (gravy, too!) After I removed the tenderloin to a platter, I ladled out the juice through a strainer so the gravy would be smooth (personal preference). I also wondered if this would be ok on low for the 9 hours we were out of the house that day - PERFECT! So - for those of you wondering in you'd ruin it during a weekday, you won't! It's wonderful.

Adrienne's Cucumber Salad

Turned out great!! I made this the night before... using 5 medium cukes & one medium (baseball size)sweet onion. As recommended by another reviewer, I warmed the water/vinegar in the microwave to help dissolve the sugar. I'm a huge dill fan, so I used about 1 1/2 Tbls in this. It was awesome! When peeling the cukes, I would peel a strip off, then leave a strip on... that way when I sliced with the mandolin, you got great coloring around the edges of the cuke. Great summer salad!!

Easy Peach Cobbler

Be sure to read the other reviews prior to making! I wish I would have cut the cream cheese into the mix first - cobbler looked VERY weird when it came out of the oven. Tasted good, but looked weird. I had a lot of 'what's THAT?' before people ate it. Also - I utilized the peach juice (from canned peaches) and will probably add more sugar next time (or add it into the cake mix)... it just wasn't sweet enough. Easy recipe, good overall - but directions weren't all that clear.

Iced Coffee Slush

I only drank one cup of a full pot this morning... it got hot outside & I needed a cool down. I noticed the pot & poured the 2 cups into the blender, added about 4 cups of ice, a 1/4 cup (to taste) of my favorite vanilla caramel creamer, 4 pks of sweet & low and a shot of vanilla extract. Yum! I also stirred in about a cup of cool whip just because I had it on had. Love it!! Very addicting...

Easy Coconut Cream Pie

YUM! As suggested, I used 1 box vanilla & 1 box coconut cream pudding. the best! I think toasting the coconut adds a VERY nice change - it's my favorite part! Great recipe!

Pumpkin Fluff Dip

Excellent & SO EASY! I didn't have pumpkin pie spice (or allspice) on hand, I googled & easily found how I could make my own allspice, and then from that make the pumpkin pie spice. I kept the extra (with holidays around the corner, I'm sure I'll use it!) in the pantry. VERY GOOD! This will be served at a football party (our team colors are orange & white) and I'm sure will be a big hit. I'll be serving with cinnamon grahams and (my fave) nilla wafers.

Easy OREO Truffles

Excellent! I followed the advice to crush cookies in the processor AND then add the cream cheese via the same way. You'll know it's well blended when the whole cookie mixture turns into a big blob...it won't be crumbly at all. I also chilled the dough for about 15 min before rolling. I then chilled the balls (in the freezer) for about 10 min while I melted the chocolate. I dipped 1/2 the batch at at time & then melted the remaining 1/2 of chocolate for the 2nd tray of balls. YUMMY.

Mexican Chicken Soup

I loved this soup! Extra cilantro was added (personal preference) and, rather than add regular tomatoes, I added a can of original Rotel to the mix. It increased the heat index a little, but it was REEEEALLLYY good!!! Added avocado (a must!), cheese, and some crushed chips as directed. It was perfect for our Christmas eve get-together!

Southern Peach Cobbler

Doubled the recipe & used my biggest Pyrex dish (4qt)... had to bake for about 20 minutes longer, but it turned out GREAT! Used 1 1/2 c white sugar, and 1/2 c brown sugar as suggested. Added cinnamon, nutmeg & vanilla to the 'batter' mix, and drained 1/2 the liquid out one of the cans. I loved using the light syrup - it kept the sweetness level down & went GREAT with the homemade vanilla ice cream that we made for the 4th. Great recipe & SO easy!

Buttercream Icing

Great recipe!! I added about 2/3 of the recommended sugar, and used all butter (rather than butter/shortening)...and everyone loved it! Consistency was great & taste was very smooth. Thanks!

Too Much Chocolate Cake

Excellent cake... although, don't do what I did and go overboard by adding the ganache recipe I found on here... way too much! The powdered sugar suggestion (or, in our case, freshly whipped cream!) works GREAT. Consistency will be somewhat gelatinous due to the pudding, but don't be worried - it bakes up wonderfully!
