Chicken Tortilla Soup V

really easy and good. i actually sauteed onions, jalepenos (seeded and chopped), and the chicken all together with a little bit of olive oil and then added garlic, cumin, and chili powder. after i sauteed it a bit, i added the low sodium chicken broth then cilantro and a little more salt. i boiled the soup for 15-20 minutes and served with shredded cheese, sour cream, and avocadoes. also had tortilla chips and mojitos.

Bacon Quiche Tarts

This was more time consuming than I had anticipated but it was delicious and they also looked so cute! Will be making them as special treats for breakfast. As a side note, they freeze well too!

Fried Potatoes

My daughter (4yo) wanted to peel potatoes for fun and I wanted to use her potatoes. We used this recipe and thought it was fantastic! We will be using this recipe for saturday's breakfast. Next time I will adda a dash of paprika for color. My daughter was SO proud of HER potatoes!

Chicken Tetrazzini IV

made this for lunch with leftover chicken and didn't have sherry but had Chinese cooking wine so i used it and was worried that it might taste funky but it was delicious. i also threw in some chopped parsley. will make again.

Chicken Pot Pie IX

The flavor was good and it was fairly easy to do but my sauce was too thick and I couldn't pour it well. The result was the sauce on top of the chicken and veggie mixture but totally dry underneath! I will try making it again but with more liquid and then tossing the whole thing together before pouring into the pie shells.

Awesome Slow Cooker Pot Roast

Dee-licious!!!!!!!!!!!!! I made some adjustments: I added a can of diced tomatoes, worcestershire sauce, lots of minced garlic, onion, celery, carrots, canned mushrooms, and beef broth instead of water. I put the whole thing on high for four hours then on low for an additional five hours and the meat fell off the bone. It was my first attempt at pot roast and am not totally sure that this is what pot roast is supposed to be like but we liked it! I served it with mashed potatoes and a side salad. Will make again this week.

BBQ Pork for Sandwiches

Loved this! I used a 5lb pork shoulder roast and used 4 cups of beef broth with a bay leaf a few cloves of garlic and half an onion and whole peppercorns and put in the slow cooker for 5 hours on high. The meat literally fell of the bone and shredding it was no problem. My DH rated it a 9 on a scale of 1 to 10. This was so easy. I served it with baked beans, cole slaw, and fries. I will use this recipe for company too!

Asian Salmon

made this last night and it was soooo good! my DH didn't like the garlic on there but i thought it was fantastic. i also added some minced ginger and added some sesame seeds. the fish was flaky and light and very flavorful. will keep this in our monthly rotation!

Broiled Tilapia Parmesan

I did not like this even though I followed other suggestions. The fish taste was masked by the parm and it was greasy and too rich. I am used to fish being flavorful and light.

Mrs. Sigg's Peanut Butter Cookies

Wow! These taste just like the Nutter Butter cookies!!!!!!!!!!!!! We LOVE them! Just remember to pull them out at 8 minutes, any longer and they'll be too crisp. I also thought I messed them up because by accident I added the salt and the baking soda to my creamed butter and sugar but they still tasted wonderful. You can not mess these up and they are delicious!

Mrs. Sigg's Snickerdoodles

When I first pulled them out of the oven, they looked and tasted underdone despite cooking them for 8-9 minutes. I let them sit for half an hour and then re-tasted them and they were FABULOUS!!! I made 3 dozen and was only left with 6 cookies but the end of the day. My DH couldn't get enough of them! Thanks for all the suggestions!

Apple Pie by Grandma Ople

i made this last night and the bottom pie crust was extremely soggy but the top crust was delicious. i brushed the top with egg wash and sprinkled with sugar. the apples were a bit tart.

Broccoli Chicken Casserole I

For a casserole, and I am not a huge fan of casseroles, this is delicious! I've made this twice already using left over chicken. I made some adjustments such as, did not cook the broccoli, used one can of cream of mushroom and one can of cream of chicken, half a can of milk, one box of chicken flavored stove top stuffing, mixed all the ingredients then put into the casserole dish and topped with shredded cheddar cheese. This is a monthly weeday meal.

really good recipe. i left the skin on because it was too much work to take it off and i marinated it for over 24 hours. i also fried it in peanut oil and the results were great! this is a keeper.

I made this last night because we had a lot of extra apples and it was a disappointment. I had followed the suggestions of other reviewers but to no avail. It was not sweet enough and the crisp was soggy. Will not be making again.

Double Chocolate Brownie Cake

I made this for company over the weekend and it was a hit! I used a plain chocolate cake mix rather than the devil's cake mix and still turned out moist and delicous and was great with a scoop of vanilla ice cream!
