Irish Chicken and Dumplings

This soup is one of my favories - I have made it a number of times and it is always delicious. A few modifications: I follow the other reviewer's comments and cut the potatoes into smaller pieces, like 1/8ths, I use 1/2 water and 1/2 chicken broth, and I recently started adding 1-2 sprigs of fresh Rosemary when adding the potatoes and carrots. It adds a really hearty flavor that I felt was missing when I made it previously. Perfect for chilly Sunday nights. Thanks!

Hot Ham and Cheese Sandwiches

This is a super simple but delicious sandwich! I make my own horeseradish mustard (equal parts horseradish and dijon mustard for what I would call spicy, less horesradish if you don't like it as spicy) and spread that on both sides of the inside of the bun. Also I don't use the butter or dill seed and they are still great. Thanks!

Chili-Lime Chicken Kabobs

Smoky Chipotle Hummus

This hummus is amazing!!! We've made it a number of times and it is always a hit. Plus it is perfect for summer get togethers since it doesn't need to be refrigerated or heated, and can be served with pita chips (Bare Naked from Sam's Club are the best!) or veggies. To make it spicier, add some adobo sauce (also gives nice color) and/or another chipotle pepper. For a less expensive version, omit the roasted red peppers and/or the sun dried tomatoes. Delicious! Thanks for sharing!

Spicy Turkey Burgers

We have made these a few times now and they are delicious every time! Followed the recipe exactly. I top with provolone cheese, lettuce, pico de gallo and chipotle mayo (see recipe on this site) and put it on a Kaiser bun and it is one amazing burger!

Meatball Nirvana

We made these with ground turkey instead of beef and they were AMAZING! We followed the advice of another reviewer and used 1/2 cup ricotta in place of the milk but otherwise followed the recipe exactly. I was pleasantly surprised the meatballs held together so well. Thanks for a great base recipe!

Turkey Tortilla Soup

My husband and I did not care for this soup at all. I thought the enchilada sauce would give a nice kick to a tomato based soup, but instead it just tasted like enchilada sauce.

Jalapeno Popper Spread

This dip was OK. I added the entire 4oz can of jalepenos and bread crumbs on top, baked in the oven and served with toasted french bread slices. It seemed like it was missing something. I think next time I will try mixing in cheese to the dip before baking.

Split Pea and Ham Soup I

This turned out really well! I changed it up a bit based on other reviews: half water and half chicken broth, added ground mustard & garlic powder, added sliced carrots, added cubed ham, and served with french bread. I did the stove top version. I would recommend that if you use this method to cook on medium-low heat. I had ours on low and it took much longer than two hours for the peas to break down.

These are so great we make them almost once a week. We do substitute ground turkey for the beef to make them a little healthier and also add crushed red pepper flakes for a little heat. Thanks!
