Grilled Chicken Breasts with Fresh Strawberry Salsa

A delicious summer recipe! I also didn't have raspberry vinegar so I used a prepared raspberry vinaigrette and substituted mint for cilantro. The chicken was lightly sweet and very tender and juicy, and the combination of sour cream, spicy strawberries with the chicken was delightful. I served it with fresh cut summer corn sauteed with garlic, lime, and topped with queso fresco

Oat Bran Muffins

These were fantastic! Delicately sweet, moist and filling. I added shredded carrot, chopped dried apples and dried cranberries, froze a batch, and they make the perfect breakfast on the way to work.

Soft Oatmeal Cookies

This is the third recipe I've tried searching for a soft and chewy, not cakey, cookie, and it's perfect! I make it with white whole wheat flour, flavored oatmeal (peach is amazing) and add dried cranberries, dark chocolate chips, and almonds.

Catfish with Spiced Fruit Salsa

The fish was flavorless, it didn't taste bad, it didn't taste like anything. And the spiced fruit salsa tasted okay, a little strange, a little like apple sauce, but the fruit and fish together was not good. Although this is definitely a taste that I'm not used to, I don't think I'll be trying it again.
