Chocolate Ganache

Reviewed: Jul. 16, 2008
This was excellent ganache. I was a little nervous about making it, however, it turned out wonderfully. I used about 1 1/2 cups of semisweet chocolate chips instead of the bittersweet chocolate. Next time I may try using milk chocolate chips. I used the ganache on the Too Much Chocolate Cake also from this site. It was amazing!!

Too Much Chocolate Cake

Reviewed: Jul. 16, 2008
This was a fantastic recipe!!! My husband is a chocoholic and so I decided to make this cake for his 45th birthday. I didn't make any substitutions at all. I felt a little guilty serving/eating such a high calorie, rich cake, but only for a minute. :) My husband was extremely happy and asked me to make it again.

Onion Rice

Very good variation to plain rice. I don't like to use plain white rice so I substituted jasmine rice instead. It was VERY good. I will definitely make it again.

Yummy Honey Chicken Kabobs

Reviewed: Jun. 12, 2008
This was an excellent recipe which leaves a lot of room for variation. I used green peppers, red onion, grape tomatoes, and pineapple chunks as well as cubes of chicken. I allowed all of the ingredients to marinate for about 4 hours. I don't have a grill (I live in an apartment) so I baked them in the oven for about 20 minutes on 400 degrees. I served them with the Onion Rice recipe also from this site. Excellent!!!

Slow Cooker Chili II

Reviewed: Jun. 6, 2008
This was pretty good chili. My husband and I love thick chili, so I chose to drain all of the beans before adding them to the pot. In addition to the spices listed, I also added 1 teaspoon of cumin and an additional 1/2 teaspoon of salt. Once everything was in the crockpot, I decided to add about 1/2 cup of water. It turned out perfect!!! My husband raved and even my picky children ate it. We topped ours with cheese and sour cream. Next time, I will add a touch more chili powder. This was not spicy at all (which was fine because of the kids).

Souvlaki

Reviewed: May 30, 2008
I wish I had known about this recipe before!! I have been trying a great deal of recipes lately and this is by far my favorite. I doubled the marinade (and let them sit in the fridge for about 6 hours) and then baked the kabobs on bamboo skewers in the oven at 400 for 20 minutes. I served the Souvlaki with homemade pitas and Tzatziki also from this site. My husband was VERY impressed--which always makes me smile. :) Thanks for the great recipe!

Spicy Garlic Lime Chicken

Reviewed: May 28, 2008
Very good chicken! I wish that I had pounded the chicken thinner. Next time I will make sure to do that and also add a smidge more lime. My hubby and I would have preferred a stronger lime taste. All in all, it was very, very good and we will be having this again soon.

Asian Beef with Snow Peas

Reviewed: May 27, 2008
This was a very good stir-fry. I followed some other reviewers suggestions and doubled the sauce. It was perfect. It never did thicken as much as I would have liked, but it didn't affect the overall meal. Every in my family loved it. I also used an assortment of stir fry veggies instead of just the snow peas. Very good!

Braised Balsamic Chicken

Reviewed: May 21, 2008
This made a very good meal. I served it with brown rice and green beans. The reason I gave it 4 stars is because I felt the need to modify the recipe. I only used 1/4 cup balsamic vinegar and substituted the other 1/4 cup with chicken broth. I believe it would have been inedible with 1/2 cup of vinegar, as it was already pretty strong with only 1/4 cup. Otherwise, it was an excellent meal and will go into our regular meal rotation.

A Jerky Chicken

Reviewed: May 19, 2008
This was an excellent meal! The marinade/sauce was really great. I doubled the marinade because we love sauce, however, I only used 1/2 of one habanero pepper (pulp removed). I was worried about the chicken being too hot for my 4 year old and 8 year old to tolerate. It wasn't. Next time, I will probably add a little bit more of a pepper. We served this with rice and black beans. Very Good!!!

Basil Chicken over Angel Hair

Reviewed: May 18, 2008
This is a very good recipe. I didn't have any fresh basil, so I used about 1 1/2 teaspoons of dried basil. Aside from that, I followed the recipe exactly. It was very tasty, however, it is important to remember that this is a LIGHT recipe. If you are expecting it to somewhat resemble pasta covered in sauce, this isn't for you. However, if you are looking for something lighter (more Mediterranean style) then you will love this. =)

Simple Malaysian Fried Chicken

Reviewed: Nov. 3, 2007
When a friend of mine was moving, she was trying to empty her kitchen cabinets of items she never used. She ended up giving me all kinds of ingredients that I have never used before. One of these was oyster sauce. I did a search on All Recipes for a simle recipe that incorporated oyster sauce, and this is what I found. This recipe is simple, easy, and tastes fantastic. I am a huge fan of curry (it's very good for you and increases your metabolism) and I turned my husband into a huge fan as well. One word of caution: when you make this, be certain to open all of the windows in your house first. My house smelled like curry for a week after I made this! Not a terrible thing, just something you may not want. :)

Award Winning Soft Chocolate Chip Cookies

Reviewed: Nov. 3, 2007
These are the best chocolate chip cookies I have ever made. I once made them for some friends at work and they started calling me Betty Crocker. Everyone always wants this recipe. The only change I make is that I add about a tsp of salt to a full batch or 1/2 tsp of salt to a half batch. One word of caution: if you are making a full batch of these, make sure you have a really big bowl and that you have a very sturdy mixer. My little cheapy Sunbeam mixer started to smoke when I made these. The dough is VERY thick. Nonetheless, these are fantastic!!

Chantal's New York Cheesecake

Reviewed: Nov. 3, 2007
This is a spectacular cheesecake recipe! Although I have spent years baking, I have never attempted a cheesecake before. I decided that I had to try this one after I read all of the great reviews. I made sure all of my ingredients were room temperature and I also made sure not to overmix the filling. I did as other reviewers suggested and placed a pan of hot water in the oven on the bottom rack for 20 minutes prior to baking the cheesecake. I left it in there the entire time and my cheesecake did not have one single crack in it. I also made sure not to ever open the oven door. The suspense was killing me, but it was so worth it. I used cherry pie filling as a topping. This is just a really great recipe and I can't wait to make it again!

Classy Chicken

Reviewed: Nov. 3, 2007
This was just okay. There was far too much dill in the recipe for my liking. I also didn't like that the breading on the chicken became so soggy after simmering in the sauce for 10 minutes. My husband enjoyed the sauce, so if I make this again, I will cut the dill in 1/2, maybe even less, and instead of allowing the chicken to cook in the sauce, I will cook the chicken thoroughly in the butter and then remove it from the pan and finish the sauce. This way the texture of the crust on the chicken will stay crisp. The pan drippings from the chicken can still be incorporated in the sauce for added chicken flavor.

Homemade Chicken Fettuccine

Reviewed: Nov. 2, 2007
This recipe has become one of my husband's favorites. It is a really great recipe, however, I did make a couple of changes. First, I doubled the sauce. It takes a LONG time to thicken properly, so you have to be patient and continually stir it. I would definitely recommend using a non-stick pan, otherwise, you could have some problems. Also, instead of mushrooms, we used broccoli. I steamed it for about 10-12 minutes first and then folded it in after the sauce had thickened and I had added the parmesan. Finally, instead of fettuccine noodles, I used no yolks egg noodles. It was all I had on hand, but it worked out wonderfully. This is an excellent recipe and even my children, who are very picky, enjoyed it.

World's Best Lasagna

Reviewed: Nov. 2, 2007
This recipe was fantastic! The sauce was amazing!! The sauce in this recipe will be my staple sauce recipe. The really great part was that the lasagna actually stayed in layers and didn't slide all over the place after it was cut from the pan. My hubby couldn't stop raving about how great this was. I ended up with about a quart of leftover sauce, so I froze it for later use with spaghetti.
