Lemon Chicken Piccata

Yum! Used this recipe when my daughter requested chicken piccata. Recipe was easy to make and turned out delicious. I added a bit of white cooking wine.

Grilled Zucchini and Squash

This dish was a huge hit with my son but there was way too much butter. Next time I will only use 1/4-1/3 cup. Serve with fresh parmesan cheese grated on top!

Baked Kale Chips

Unfortunately kale is not a cheap buy but this recipe was worth it! The kale has an odd but addictive flavor. 1 tsp of seasoned salt goes a long way. I made the mistake of oversalting mine. My 11 year old son chowed this down. I will definately make again but when kale is on sale.

Spiced Pork Chops

These were well liked by everyone in my family. I did not have celery salt so I omitted that. I do think there were a lot of spices and think that some of them could be left out. There was a lot of ketchup flavor that seemed to over ride all the spices that the chops were floured in.

Pumpkin Bread IV

Super easy recipe. When I first made this and pulled it out of the oven I was really worried because the tops of the loaves were hard. After the bread cooled I stored each loaf in a gallon size ziploc bag and by the next morning the whole loaf was super moist and soft. It had a wonderful flavor. The whole family loved it. I will definately make this again because it was a nice change from my usual banana bread.

Award Winning Soft Chocolate Chip Cookies

So delicious! FYI- I have a Kitchenaid mixer with a 5 qt bowl that struggles to contain this recipe when it is fully put together. It takes up the entire bowl. When I add the flour it can get a bit messy. The dough gets really thick and I can hear the motor struggling a bit. I make the recipe in 1/2 batches and it works out well.

Cauliflower alla Parmigiana

I couldn't find the lemon pepper panko so I used plain panko and added lemon pepper. It was really good. I think it would have been just as good with the plain panko. I think the plain panko would acutally go better with a main dish that has a strong flavor. Really this recipe could be made with any seasoning. I think an italian seasoning would be really good too!

Savory Pork Chops

Yum! May 9 year old is in love with this recipe! I think part of it was because she made the sauce but it was really delicious. The meat was very moist. I used boneless 1/2-3/4 inch porkchops and the timing was perfect. Very moist.

BBQ Pork for Sandwiches

This was a hit for my football party! I used a pork shoulder (cause that's what was on sale) and put it in the crock pot with the broth for 4 hours on low and 1 on high. Then drained the juices, removed the excess fat and then chopped the meat. I used the Famous Dave's Sweet and Sassy sauce for the oven cooking. The meat turned out beautiful!

Slow Cooker Beef Stew IV

I didn't have red wine so I used white and added some red wine vinegar. I also added some celery. I think that at then ended the stew could have used some pease just to add color. The flavor was good and everyone raved about it!

Marinade for Chicken

No more dry grilled chicken at my house! This was delicious! I did not have lemon juice so I used lime. I think it added a nice zing to the recipe. I also only used half the amount of soy sauce because I ran out. The recipe makes a TON! I will probably cut it in half next time.

Creamy Au Gratin Potatoes

This was a nice recipe to have instead of the box version. I always worry about the chemicals, additives and preservatives used in pre packaged foods. I used mild cheddar but may use sharp cheddar next time. I also used 1/2 a small onion. We were having meatloaf and didn't really want to have a complete onion meal. Next time I may use no onion at all and add cornflakes or bread crumbs to the top.
