Zucchini Apple Bread

I tried it once, and made a double batch soon after! I used 1/2 oil, 1/2 applesauce, and shredded the zucchini and apple with a salad shooter. I also made them into muffins. 20-23 minutes was a more manageable wait for my sugar fix. :) Thank you for the recipe!

Apple Cinnamon Zucchini Muffins

Delicious! A little like a fairly dense apple cake. Mine got sticky on top, but probably because I had to transport them with a lid before they cooled completely. I can't wait 'til the second batch gets out of the oven!

My Canadian Friend's Bean Soup

Do NOT use ground italian sausage. It was NOT good. The rest of the soup was tasty, so may try it again if I can find the turkey Italian sausage with casings mentioned.

Oma's Rhubarb Cake

I was craving rhubarb, and this recipe came with great reviews, so I gave it a shot. Simple to prepare, and very moist, but too sweet for my taste. One of the reviewers made it with half the sugar, so I may try that the next time. After writing the paragraph above, I asked my husband what he thought of it. He loved it, and my 5yo son said he would give it 10 stars, if he could. I'm raising it to a four star, and eating it with coffee.

Farmhouse Chicken

Good, but WAY too salty. I even skipped the salt. There's probably such a thing as low-salt canned soup. I'd try that next time. I'm sure my broth was low-salt. I'd cut the salt wherever I could. Other than that, it was tasty. And, I got rid of the stuffing in my pantry! Thank you for sharing.

Southwest Chicken Salad I

Yum!! I used the white meat off a rotisserie chicken, just a little diced yellow onion instead of the red rings, and skipped the cilantro because I didn't have any. Excellent! Thank you for sharing. I made it again, and used diced chicken breast cooked with olive oil and a spice mixture from a friend (salt/pepper/garlic powder). I also switched out the parmesan with grated cheddar this time, and it was still excellent!

Simple Turkey Chili

This was great!! I skipped the oil, and added the garlic when I added the onions. I also replaced the water with chicken broth--one can plus water to make a full 2 cups. I didn't have crushed tomatoes, so used a can of diced tomatoes with chili seasoning. Fabulous served with sour cream and grated cheese. Yum! Thank you for the quick, easy, inexpensive and delicious recipe!

Oven-Roasted Asparagus

This asparagus was a hit at Easter dinner! My 13 month old didn't each much else. :) I covered my cookie sheets with aluminum foil before lining up the asparagus. Just before putting them into the 350 degree preheated oven, I sprayed them liberally with cooking spray, and sprinkled with salt, pepper, and a little bit of garlic powder. They were in the oven for 10 minutes, and then I sprinkled them with parmesan and a little lemon juice. Tasty! Thank you for the recipe and the cook's note about removing the woody ends--what a huge difference! Thank you.

Court's Creamy and Quick Burritos

Great! I only made two changes--cream of chicken instead of cream of mushroom soup, and less cheese on top. My picky eater (3.5 years old) didn't care for it, but my 5 and 1 year olds gobbled it up. My hubby loved it and had to resist after his third or so helping. :D Thank you for sharing!

Baked Chicken and Zucchini

Easy, fast, delicious, healthy, inexpensive! I might add a sprinkling of salt to the zucchini next time, but maybe not. The only down side is that my 3 and 5 year old sons needed some convincing to eat the veggies. Ah, well. Not every recipe caters to that crowd. :) Thank you for the recipe!!

Poor Man's Pie

It's nothing fancy, but it is tasty! My husband and 5-year-old son kept taking more helpings until it was gone. My 1-year-old daughter loved it too! My 3-year-old son is another story.... I don't care for cream of mushroom, so used cream of celery instead. I also used frozen corn and green beans (mostly thawed in the microwave) instead of canned. Thanks for the recipe to use up extra mashed potatoes!

Chicken Tortilla Soup V

I followed the recipe as written, except doubled the garlic and cumin to make it easier to mix in. I didn't find it hard to understand the process at all. Simple. Easy. Delicious. If you think chips in soup might be weird (like I did), I recommend giving it a try. You might love it--like I did!

Sensational Chicken Noodle Soup

Note to self: use white meat! Sauteed with butter: onion, garlic, celery and carrots. Added three cans broth, salt, pepper, oregano and parsley. Brought to boiling. Added chicken and noodles. Five year old loved it.

Turkey Taco Soup

Excellent! I didn't have celery or cilantro on hand, and used a canned chili instead of fresh. I also used taco seasoning I from this site instead of the package. I used two cans of chicken broth, and just a pound of ground turkey. I'd prefer less broth and more turkey (like the recipe calls for) for a thicker consistency, but it's harder to do with how things are generally packaged. Excellent, excellent! My 11 month old daughter even loved the black olives. :)

Orange Tapioca Salad

I used the mandarin orange juice as part of the three cups of liquid, replacing some of the water. I also added two sliced bananas to the mix right before serving it. 'Twas a hit at our family Christmas dinner. Thanks for the recipe!

Mexican Potato Nachos

This was excellent. My hubby and I gobbled it up! I read a bunch of the reviews, and then did it like this: I peeled the potatoes, and sliced them between 1/4 and 1/2" thick. I used enough to cover the bottom of a 9x13 glass pan. I swirled the potatoes with more than a tbsp of oil, laid them out in the pan, and sprinkled with the pepper and salt. I baked them for longer than 10 minutes--probably about 20 minutes. They were starting to brown on the top--perfect! It made the recipe taste a little like a smothered bake potato. I used a pound of meat, and a whole packet of low sodium taco seasoning in the meat/beans mixture, and skipped the oil. (However, I didn't use the whole meat mixture in the recipe; there were leftovers for tomorrow.) I used a cheddar/jack mix, as someone recommended. For toppings, I used lettuce, tomatoes, salsa, sour cream, black olives and no heat (jarred) jalapeños. Unfortunately I didn't have avocado/guac on hand. Delicious! A definite keeper. And BTW, I don't give out a lot of 5 star reviews. Thanks for sharing! PS-It would be nice to be able to add reviews from my ipad (which is what I use in the kitchen). Why won't it take my stars?!

BLT Salad

Very good, and I'll make it again. However, the dressing was too mayo-strong for me. Next time I'll do what others have done, and replace some of the mayo with sour cream. I think that'll help with the strong aftertaste. I made croutons from elsewhere on allrecipes. No extra salt in dressing. Croutons and dressing served on the side. Thanks for the recipe!
