Zucchini Tomato Soup II

Made as is, except used 1 large onion, a bunch of cherry tomatoes from the garden rather than 1 large tomato and low sodium chicken broth. I removed the veggies and put them into another pot to puree them with an immersion blender. I left a few chunky pieces too. I seasoned with 1/4 tsp salt and 1/2 tsp pepper at the end! It was perfectly delicious and really easy to make! My one year old daughter just loves it! This recipe is definitely a keeper!

Bacon and Potato Soup

OMG, I've been searching for this recipe for years (a non-cream potato soup!). It's just like my Baba's from when I was little! I did make a few changes. My Baba used to put vinegar in her soup to ensure the potatos hold together. So I added 2 tsp white vinegar at the same time as the chicken stock. Also, I didn't add the cheddar cheese, she never added cheese and the soup doesn't really need it. I didn't used olive oil either, I just removed enough bacon grease to ensure about 1 tbsp and the drippings were left in the pan to cook the veggies in. Delicious!!!!

Pretzel Turtles®

Delicious and sooo easy to make! I used mini pretzel twists and ROLO chocolate. I put the unsalted pecan half on top of the chocolate before baking to toast the pecan a little. I only baked for 3 min. PERFECT!!!

Lite Coconut Cake

I made this for my mother in law's birthday, she loves coconut!! What a hit!!! This was such an easy and delicious cake to make! I used golden cake mix instead of white and regular cool whip instead of light (cause I accidently bought both) and it still turned out delicious! I served it the day after I made it, however, it was even better 2 days later!!! You'll enjoy this dessert even if you prefer real whip cream to cool whip!!
