Couscous and Cucumber Salad

This recipe is delicious and so fresh tasting. I thought it was even better the next day as the flavors/lemon was more pronounced. I did not seed the cucumbers.

Baked BBQ Fried Chicken

Pretty good, served during a football game. I don't think the butter is necessary; I skipped that, just spread sauce on bottom of cookie sheet and it was fine.

Indonesian Pork Satay

The marinade made a decent amount and I was able to marinate more than 1.5# just fine....maybe around 2# of pork loin. I didn't feel like putting them on skewers, and I can only imagine they would be deicious that way, but I just lined them all up on a large cookie sheet and baked them. I think the oven was somewhere between 350-375 for 10-15 mins, flipping halfway. Yum!! The peanut texture is great, and it seemed these tasted even better the next day.

Tangy Apple Chicken Loaf

Delicious! I had to use a little more breadcrumbs than the recipe said, maybe it was 3/4 cup, but enough to get the loaf into a working consistency, and it was still very moist. I didn't have dijon mustard on hand so just used regular yellow mustard for the glaze....only a tablespoon. It was a nice flavor and perfect for Fall!

Cranberry Rum Punch

Very good. I made a batch both with sugar and without the sugar. It's good both ways; if you're not fond of sweet drinks go sans sugar....still good. The lemon garnish added a nice touch.

Albino Pasta

This was okay. I added tons of garlic. Leftovers are not very good - pasta gets firm after it's been cooled - so, you may want to cut the recipe in half if you don't have a lot of big eaters!

Polish Sausage Soup

I was expecting this to be kind of blah but was pleasantly surprised. I sauteed the onions, carrots, and celery in a very small amount of olive oil with salt & pepper. Then added the potatoes and sausage and sauteed that for just a few more minutes before adding water. I was surprised how tasty it was with just using salt, pepper and water.

This was very good - instead of 1# bacon I used 1/2# bacon & 1/2# bulk sausage. Also, I would definitely layer hash brown potatoes instead of the cooked cubed potatoes I originally used.

Chicken in Onion and Mustard Sauce

Artichoke and Roasted Red Pepper Dip

Unfortunately this recipe was just okay. I thought it was too oily, and it needed something more - a little bland. I thought 3/4 cup of cheese would be plenty but it wasn't creamy at all and I couldn't really taste the cheese in the dip.
